Long ago, I realized that the process doesn't need me for anything other than temperature control.  Typically, I don't wrap anything.  Build the fire, season the meat, and cook it till it's done.  But the allure of a shorter process often draws me into one of these "hot & fast" attempts.

It's better if you marinate chicken first then put inside half a jalapeño then wrap with bacon. Been doing this forever. Put a bunch on long skewer because it's easier to turn 1 with 6 on it than singles because of flame up
