Banana Mocha Paleo Breakfast Cake (recipe below)

* 3 bananas
* 1 cup coconut sugar (I use +Wholesome Sweeteners)
* 1/2 cup brewed coffee, cold
* 3/4 cup coconut oil, melted
* 1 teaspoon vanilla extract
* 1 tablespoon apple cider vinegar
* 1 tablespoon cinnamon
* 1 teaspoon sea salt
* 2 cup coconut butter
* 1 teaspoon baking soda
* 2 large organic eggs
* 1/4 cup cocoa powder
* 1-2 cup mini chocolate chips (I use +Enjoy Life Foods)

1. Preheat the oven to 350F.
2. Add the bananas to a large mixing bowl and mash. Mix in the coconut sugar until blended.
3. Add the coffee, coconut oil, vanilla extract, apple cider vinegar, cinnamon and sea salt. Fold in the coconut butter, baking soda, eggs and cocoa powder and mix by hand or with a hand mixer until smooth.
4. Pour the mixture into a coconut oil greased 8×8 glass baking dish and top with Enjoy Life mini chocolate chips.
5. Bake uncovered for 20 minutes or until a toothpick inserted in the center comes out clean.
6. Remove the dish from the oven, let rest 5 minutes (so you don’t burn your tongue – hey! don’t say I didn’t warn you), slice and serve warm. Or wait until cool, top container with a lid, transfer to the fridge and serve cold. Slice and eat with a warm cup of coffee in the morning, as a sweet snack during the day or warm and serve for dessert. Store on the counter or in the fridge.
