Last night I was able to go to a panel discussion with Ferran Adria, Nathan Myhrvold, and Harold McGee, moderated by Lisa Abend - WOW! It was amazing to see all three of them talking abou the evolution of modernist cooking.

The key take aways for me were that until there was food science you really had to apprentice to try and become a domain expert and still you might have a narrow understanding of the cooking process. The other take away is to think of the moderist food movement like other modern forms of expression in the classical arts - dance, architecture, visual arts.

The added bonus was to have some dishes served by Tony Maws of Craigie On Main - Yum.

He's written one helluva a book on that subject! 5 volumes, $450, written by scientists!

Geek-out, awesome!

Modernist Cuisine: The Art and Science of Cooking
by Nathan Myhrvold, Chris Young & Maxime Bilet
http://goo.gl/ayPuD

In Modernist Cuisine: The Art and Science of Cooking, Nathan Myhrvold, Chris Young, and Maxime Bilet — scientists, inventors, and accomplished cooks in their own right — have created a six-volume, 2,400-page set that reveals science-inspired techniques for preparing food that ranges from the otherworldly to the sublime. The authors and their 20-person team at The Cooking Lab have achieved astounding new flavors and textures by using tools such as water baths, homogenizers, centrifuges, and ingredients such as hydrocolloids, emulsifiers, and enzymes. It is a work destined to reinvent cooking.

I was laughing hard when I watched this last night, but wow does it worry me. It might as well be the Dark Ages - it feels like much of the Republican machine wants people to be ignorant so they are easier to rule, they are casting science as evil. How is this different than throwing Galileo in prison?

This is a really funny video. What's so tragic is that, if this were making fun of my company, we'd have everyone working overtime to fix the issue. But it seems that the people who control both American political parties want it this way...they want it to be a big inside joke. They will laugh even harder when they see some people only laughing when it's not about the side they emotionally invested in. Meanwhile, at both conventions this year, the delegates were yelling to go one way while the people at the podium brazenly said that the delegates were surely agreeing to go in the other way. Apparently, party knows best.

That sounds similar to http://en.wikipedia.org/wiki/IntelliTXT, which drives me nuts -- brushing my cursor across one of the links covers the article I'm reading with a popup of related ads. Is this less intrusive?
