It's textured soy protein.  But I was browsing the blogosphere yesterday and found this recipe for meatless chicken with shiitakes and bamboo shoots that looks pretty good too!

Introduction
I'm a Ph.D candidate at UC Berkeley exploring the history of English foodism during the Age of Reason.  You heard me right – not only was old English food actually pretty tasty, but connoisseurship of food also molded our present-day conceptions of culture, class and civic identity.  Read on for tales of ultra-elite dining clubs, orgiastic turtle-feasts, and the unlikely origins of modern restaurant culture.
