Jian dui (Fired Sesame Ball) is a chewy Chinese fried snack dish made from glutinous rice flour. It is coated with sesame seeds on the outside to give the crispiness. Some varieties of Jian Dui come with hollow inner part without any filling. The recipe I share here uses filling with a tasty mix of sugar and lentil

Kappa (കപ്പ /ചീനി) or Tapioca is a very popular main course dish in common man’s cuisine in Kerala. Being a rich source of starch, kappa is an inexpensive replacement to rice and is easily available. Unakka (dry) kappa is the preserved form of kappa, where kappa is peeled, washed, sliced or diced and dried in sun (sometimes after boiling). It can be stored for years and when cooked gives out a totally different flavor compared to raw version. Dry tapioca vevichathu (kuzhachathu) goes well with fish curry or chilli chutney.

GREEN BEAN CASSEROLE
A classic side dish very popular during the festival occasion of thanksgiving in the United States! Green bean casserole is a casserole consisting of green beans, cream of mushroom soup, and french fried onions. I was thinking of this dish for quite a while to add to my international recipe category. Had to go on for couple of iterations to finally get it to my satisfaction.

Banana Fry  or Pazham Pori (Sweet banana dipped in batter and fried in oil) is a very popular tea-time snack of Kerala. Chakka (ചക്ക -Jack Fruit) Pori is a variant of this popular tea-time snack, using pieced Jackfruit Bulbs (ചക്ക ചുള) instead of banana. Tastes great and the crispness of the fried batter makes this a wonderful snack /dessert. Make sure to use the firm version of the Jack fruit (വരിക്ക ചക്ക) for this preparation.

Fruit cake, a traditional delicacy of Christian cuisines worldwide!, Fruit cake is made with chopped  candied fruit (Tutti-fruitti), nuts, and spices, soaked in alcohol (typically Rum, as i used in this preparation). Fruit cakes are often served in celebration of weddings and Christmas. There are multiple recipe ideas around for this cake dish and the one I share here is a traditional one which gets us the authentic taste and flavor.

I had to research a bit to get the traditional taste of this Kerala- Christian dish. We used to get it from our Christian neighbors during Christmas time. In the conventional way Orappam (ഒരപ്പം) is prepared in a special made earthen pot (ഒരപ്പ ചട്ടി) and baked with coconut shell charcoal fire. I used preheated oven and oven safe tray instead. The taste, I would say is close to the traditional method even here… Try it out!
