#TuesdaySuperSurprise: Which healthy snack you prefer as a monsoon snack? 

Try our ROASTED VEGETABLE SALAD loaded with a variety of nutrients such as Vitamin C. That's not all, it's good to be enjoyed as a main meal too.

ROASTED VEGETABLE SALAD

Preparation time: 20mins 
Roasting time: 30 mins
Serves: 4
Ingredients :

For salad
MAGGI Magic Masala Cube-Vegetarian 1, crumbled
Olive Oil 1 tbsp
Garlic 2 cloves, sliced
Sweet Potatoes with skin 1, cubed 1”(150g)
Potatoes with skin 1, cubed 1”(150g)
Red capsicum 1,diced thick (60g)
Green Capsicum 1, diced thick (40g)
Zucchini 100g, diced thick
Onion 1, cut in to wedges (100g)
Almonds, toasted 20g
Lettuce leaves 2 cups, shredded

For Dressing
MAGGI Magic Masala Cube- Vegetarian 1, crumbled
Olive Oil 2 tbsp
Mustard Powder 1 tbsp
Lime juice 2 tbsp
Oregano 1 tsp
Salt To taste

Method :
1. Preheat the oven for 200º C.
2. Mix together the oil, garlic and crumbled MAGGI cubes in a roasting tray. Place the sweet potatoes & potato in this and toss well. Roast in the hot oven for 20 minutes
3. Turn them once, add the capsicums, zucchini, &onion and roast further 10 minutes.
4. Remove from oven and place them in a bowl lined with lettuce leaves. Sprinkle the toasted almonds over the vegetables.
In a small bowl whisk together the ingredients for the dressing. Pour this over the roasted vegetables. Toss well .Serve warm or at room temperature.
