Revisiting Able's Kone this morning. It's been a while, but here's a breakdown of my go-to method. Next time I'll probably grind a touch coarser and pour a bit more smoothly in an effort to minimize the fines that make their way through the filter. http://imgur.com/a/p3r0d

I think that's around a 20 on mine, +Matthew Moberly. Yours could be totally different — they usually are — but it won't hurt you to start around 20 and adjust from there.. if you're using the Kone, that is.

+Demitasse Cafe just started roasting and I'm really enjoying their stuff. Makes me wish I had checked out their shop while living in LA. If any of you folks are around there you should pay them a visit!

Looks interesting. starting to get put off a little by the "sweet" tag (like on the El Sal), as more than often it ends up messing up the after taste for me. That said, if it was close I would still love to try it at least once.

Huge thumbs up for the packaging. Love that they show the process, varietals and the region. I do how ever wish they would keep the flavour notes off the front, and perhaps hide them inside the package, as if you are expecting the flavour to be their is becomes a bit of a self fulfilling prophesy.

Problems appear not when we tamp with varying degrees of pressure but with varying degrees of tilt. This nutritious nugget brought to you by 3 Things Learned. http://3thingslearned.tumblr.com/post/37722657875/3-things-learned-about-tamping-for-espresso-prep

I love getting coffee gear for Christmas. Maybe you know someone else who does too.

+Vincent Evers, for small batches (~12 ounces) I usually use a medium grind for the Chemex and go a bit finer for the V60. On a 40-point scale, these two settings are 3-5 points apart. The V60 requires a finer grind because the inside ridges push the filter off of the wall and permit more airflow. This allows the water to flow more quickly, which we balance with a finer grind. The thicker paper probably has some influence too.

Really aggressive technique here, but folks who bring home a WBC title usually know what's up.
