Karine Lawrence, Sirocco Principal, has been working for the Canadian and US wine and food industry for over sixteen years. Now, she’s sharing her extensive working knowledge with aspiring winery assistant students at Okanagan College’s Penticton campus. Karine will be co-teaching the WINE24 module, Quality Control and Public Relations. This module addresses the core competencies of the Quality assurance and Quality control specialist within small and large wineries.

"With the release of the new GFSI Benchmarking Requirements, food fraud is a threat that must be addressed. GFSI-benchmarked themes, such as SQF mandate the development of a food fraud vulnerability assessment. According to Food Safety Magazine, food fraud is a global issue believed to cost between $30 billion to $40 billion each year."

The control of the spread of communicable diseases via food and within the food environment is a number one priority of our industry.

"An outbreak of hepatitis A has claimed another life in Michigan. Also, another restaurant worker has tested positive for the highly contagious virus, exposing an unknown number of people who ate at a Red Lobster in the past month." - Food Safety News

"The majority of Canadians were unaware of some of the most significant food recalls in recent years, according to a new survey that calls into question the government’s effectiveness in communicating food-safety concerns.

The survey, conducted by Dalhousie University researchers, demonstrates that the vast majority of consumers significantly underestimate the frequency of recalls in Canada and display a general lack of awareness about a critical component of the country’s food safety system."

Coming this May to Okanagan College: Wine 24!
This course will discuss the quality controls, standards, and requirements in the world of wine. Further, we will be assessing and classifying wines with scientific sensory methodologies including discrimination tests, descriptive analysis tests, and consumer tests.

All of this will be presented by our own Karine Lawrence this Summer at OC!

Want to know how to develop a Food Safety Plan that’s compliant with FDA Preventive Controls & HACCP requirements???

Sirocco’s Principal, Karine Lawrence, recently taught another FSPCA course (Human Food) in Western Canada. FSPCA Preventive Controls for Human Food is the standardized food safety curriculum that is recognized by the FDA.

Under the Food Safety Modernization Act (FSMA), companies that manufacture, process, pack and hold food products for consumption in the United States must now comply with the preventive controls for human food regulation. Compliance started last September for small businesses registered with FDA.

The value of the FSPCA course is that it grants participants a “preventive control qualified individual” (PCQI) certificate. Under the new US food safety requirements, a PCQI must conduct or oversee the development, implementation and maintenance of a food safety plan.
