Sugar Free Pumpkin Cheesecake

Ingredients
8 oz pecans
2 Tbsp butter
16 oz cream cheese
½ cup canned pumpkin puree
2 eggs
½ tsp vanilla
½ tsp cinnamon
pinch of nutmeg
pinch of ground cloves
16 packets stevia (or your preferred sweetener)

Instructions
For the crust, finely chop nuts in a food processor. Pour into a bowl and stir in melted butter. Press mixture into a 9" pie pan or a cheesecake pan. Bake at 350 for 15 minutes, then chill.
With an electric mixer mix the cream cheese, vanilla, and stevia. Slowly blend in the two eggs. Beat until smooth. Add the remaining ingredients, and continue to mix at the lowest speed.
Spoon the mixture into the pie crust, smoothing it out. Bake for about an hour (checking in after about 40 mins with a knife to see if it comes out smooth).
Chill for at least 3 hours.
