A twist on a classic chicken soup. Add a lemon, artichoke hearts and diced tomatoes and you have a soup with wonderful tanginess that kicks "chicken soup" up a notch!

I love when my kids are home. My third child, Brian, had been home for the past month enjoying a semester break before he heads to Prague for a semester abroad. As we were stuck in the house, recovering from another winter storm. he and I got to put together a unique soup.

He works at the Country Club of Missouri when he is at school (University of Missouri - Columbia). It has been a great part-time job for him. Brian loves food and gets to try all different types of dishes at the country club. He talked about a chicken lemon orzo soup which had artichoke hearts in it. With a little bit of creativity we were able to replicate this soup.
