On a hot, steamy summer day, a fresh chilled gazpacho soup really hits the spot. This soup is typically made of chopped tomatoes, cucumbers, onions, garlic, oil, and vinegar, and served cold, but Chef Uffe has his own special recipe for it that he perfected while working with a talented chef from Spain several years ago. What are Frikadeller? These flat, pan-fried meatballs of minced meat, often referred to a Denmark's version of meatballs, is a classic dish in Denmark. It's not surprise, then, that Chef Uffe (who hails from Denmark) has perfected his recipe for them at Roseina's. You won't find them on the menu every day because they only appear on the Specials Menu during the week. Served with red bliss potatoes, broccoli, carrots and asparagus and an old fashioned gravy, Roseina's Frikadeller are indeed a rare treat around here!

As the days get longer, and the air gets warmer, the idea of a fresh, cold soup sounds more and more appealing. Try one of our delicious seasonal soups such as gazpacho or potato and leek soup, sometimes referred to as Vichyssoise. Interestingly enough, Vichyssoise is not French. It's purely American. It was created by a chef at the Ritz-Carlton in New York in the summer of 1917 to help keep patrons cool. The French name was attached to the soup since the chef, Chef Louis Diat, was French.

Spring may be here, but the cold temps seem to be hanging on. Thank goodness Roseina's classic Butternut squash soup is a mainstay all year round on our menu!
