Hello My Foodies and How Are You Doing Today? Well, things are finally calming down here at my house, as my son headed back to college this weekend... Boy, do I miss him already and all of his friends too!! Things are kind of quiet around here again, so I guess I had better get busy with life again, huh? LOL How are your New Year Life Changes Going? Mine are not off to the best of starts, but it's never too late to get started today and that's what I'm going to do...I'm going to go to bed at a halfway decent time tonight (anyway for me) and I have been eating a bit better and exercising too... I've still got to clean out my closet and put a whole new hanging system in it, as I broke mine all down a few months ago and I've yet to have time to clean it all out, paint it and then redo it!!! I guess I had better get started on that, huh? LOL Well, no matter what, it's still going to be there whenever I get to it, so I'm not going to get down about it!!! LOL I do need to set some goals for the year, as do all of us... So, what are your goals for the year and what do you want to accomplish in the next week? My goals include continuing to eat better and exercise more (which I think I'm going to add some hiking in and finally some running in the not so distant future, as I plan to run a few more 5K's this year)!!! So again, what do you want to accomplish and when do you plan to get started? There is no better time than the present!!

I really like Mexican Food and a Pizza every-now-and-then is nice too!!! What about mixing those two things together? I think it's a brilliant idea, so here's an Easy Mexican Pizza Recipe that you'll want to try out on your family... Easy Mexican Pizza

• Prep: 15 MIN
• Total: 30 MIN
• Servings: 6

Ingredients
1 can refrigerated classic pizza dough
1 cup canned refried beans
1/2 cup canned red enchilada sauce
1 1/2 cups shredded Mexican blend cheese (6 oz)
Garnishes, as desired
3 medium green onions, chopped (3 tablespoons)
1 cup sour cream
1 cup Thick 'n Chunky salsa

Directions:

• 1 Heat oven to 425°F. Grease or spray 15x10x1-inch pan.
• 2 Unroll pizza dough in pan. Using an offset spatula, spread beans over crust, leaving 1-inch border around edges. Spread with enchilada sauce; sprinkle with cheese.
• 3 Bake about 15 minutes or until cheese is bubbly and melted. Sprinkle with green onions. Serve with sour cream and salsa.

Hello and Good Monday Morning To All Of My Foodie Friends Out There!!! How many of you out there have had a hard week? I have to say, this has been a very hard week for me and some of my friends...First of all we celebrated the life of one of my kids from Wednesday night church, who would have been 17 today... It was great to see everyone, but it was sad that he wasn't there for his 17th birthday...This young man was one of a kind, as I shared the story earlier, he was killed in a car accident about 7 weeks ago... The up side to this story is that we know where he is and he's celebrating his first birthday with Jesus in heaven today... We sure do miss you Coleman!!! Also, today I lost a sweet elderly friend of mine, Dale Caraway (A/K/A Pops to me)... I've been visiting with Dale for about 2 years now and boy have I learned some great lessons from this sweet man...First of all, he taught me how to forgive, even when people have hurt you to the core!!! He forgave easily and didn't carry grudges, what a lesson that was!!! He also was content in whatever situation he was placed in and he showed me that was a choice I had to make for myself, another lesson I needed to learn!!! Dale was one of the kindest, sweetest and loving people I think I've ever met... This gives me something big to strive for...I sure will miss you Dale, but I will see both you and Coleman in a minute, even though it will seem a whole lot longer here!!! Here's to 2 lives well lived and now to follow their example and to live my life much better starting in 2018!!

Yes, they are called Skinny Smothered Pork Chops and they are quite tasty and much lower in calories...Get started right and eat what you want, but cut a few calories so there is no guilt!! Skinny Smothered Pork Chops

• Prep: 30 min
• Total: 30 min
• Servings: 6

Ingredients:
6 boneless pork loin chops (4 oz each)
1 teaspoon canola oil
1/2 cup chopped onion (1 medium)
1 package (8 oz) sliced fresh mushrooms (3 cups)
1 can (10 3/4 oz) condensed 98% fat-free cream of mushroom soup with 45% less sodium
1/4 cup water
1/2 teaspoon reduced-sodium soy sauce
1/4 teaspoon dried sage or thyme leaves
1/8 teaspoon pepper
1/2 cup fat-free sour cream (I use low fat sour cream)
Directions:
• 1 Trim any visible fat from pork chops. Heat 12-inch nonstick skillet over medium-high heat. Add pork chops; cook about 4 minutes on each side or until slightly browned. Remove pork chops from skillet; set aside.
• 2 In same skillet, heat oil over medium heat. Add onion and mushrooms; cook 3 minutes, stirring frequently.
• 3 Stir in soup, water, soy sauce, sage and pepper until well mixed. Heat to boiling. Return pork chops to skillet; spoon some of the sauce over pork. Reduce heat; cover and simmer 12 to 15 minutes, stirring and turning pork chops occasionally, until pork is no longer pink in center.
• 4 Stir in sour cream until well blended and smooth. Cook, stirring constantly, just until hot. Serve pork chops with mushroom mixture.

Hello My Foodies and A Very Happy New Year To You!!! It's been a few days since I've been on, but now I'm back and in the saddle after all of the holiday festivities!!! how were your holidays? Mine were really nice, but again, it's always good to be home!!! Christmas was great with my family in Oklahoma and we had a fun time with our friends here in Hendersonville for New Years Eve, but now it's time to buckle in and start the New Year Right!!! How many of you have New Years Goals? I have a few of my own and some of them include getting to bed at a decent hour and eating a little better (Although I eat pretty well, I started slacking by the end of the year pretty bad!!!) It's time to jump on the "Get Healthy Train" and get this year of 2018 off to a good start!!! Who's with me? What are your goals for this year? Let's Just Do It (As Nike Would Say!! LOL)!!!!

If you want to get started on the right foot of eating healthy, here is a recipe that you will definitely want to try (If you like Mexican food, that is!). This Light Crock Pot Fiesta Chicken & Rice Bowls Recipe is totally yum and a simple fix...Try this one out on your family, they'll be asking for it again this week, I'm sure of it!!! Light Crock Pot Fiesta Chicken & Rice Bowls

Serves 4

Ingredients:
• 1 lb. uncooked chicken, cubed
• 1 c. uncooked brown rice
• 1 can (10 oz.) enchilada sauce
• 1 can (4 oz.) chopped green chilies
• 1/2 c. chicken broth
• 1 medium onion, chopped
• 1 tsp. cumin
• 1/4 tsp. salt
• 1 avocado
• 1 c. pico de gallo
• 1/2 c. queso fresco, crumbled (Optional…Sometimes I just sprinkle on a little Mexican Blend Cheese)
• 1 c. non-fat plain Greek yogurt or light sour cream (Optional)

Directions:
Spray your Crock Pot with non-stick spray and add the chicken, rice, enchilada sauce, green chilies, chicken broth, onion, cumin and salt. Stir to combine and cook on low for 5-6 hours or high for 3-4 hours. Serve topped with pico de gallo, queso fresco and Greek yogurt.

Hello and Happy Almost New Year!!! It's been a while since I've been on FB to share recipes and encourage you, as I've been out of town celebrating Christmas with my family in Oklahoma!!! We had such a nice time, but I'm so glad to be back home!!! LOL How was your Christmas? Did you do anything fun or add any new traditions to your Christmas list? LOL The weather was so cold while we were in Oklahoma, so I was hoping for snow, but there was to be no snow!!! (Sigh...) It felt like Christmas though and that will have to do for now!!! It was so nice to see my dad, his wife, my brothers and their wives, my nephews and my niece!!! We had lots of great food, laughs, pictures and good conversations!!! Family and Jesus truly is what Christmas is all about!!!

Need something tasty, easy to make and something you can have ready in a short amount of time for that party you just got invited to at the last minute? Here's the answer and I'm making it for the New Year's Eve Party I'm going to...As a matter of fact, it was a request!!! LOL Try this "Life Of The Party Chicken Cheese Dip" and then let me know if you have any left after your party!!! Life of the Party Chicken Cheese Dip

Ingredients:

1 1/2 Cups Cheddar Cheese-Grated (I usually just use a whole bag of Fiesta Blend Grated Cheese- About 2 cups)
1 Cup Mayo (I use miracle whip light)
1 Chicken Breast Cooked & Shredded or 1 Large Can Of Chopped Chicken
2-8 oz. Blocks Of Softened Cream Cheese(I use light)
1 Small Onion Chopped
1 Can Cream Of Chicken Soup
1 Can Rotel-Original Flavor
1 Small Can Green Chiles or you may use Jalapenos (1/4-1/2 cup), chopped

Preheat oven to 350 degrees.
Combine everything except cheddar cheese, spray a baking dish with PAM and place mixture in the baking dish. Bake at 350 degrees for 25 minutes until hot & bubbly. Add cheese and bake an additional 5-10 minutes, or until cheese has melted. This dish never lasts for very long, so you might want to make a double batch if you want extra.
Serve with tortilla chips, on tortillas or fresh veggies. This is my favorite dip!

Hello And Happy Monday Everyone!!! Well, the count down is quickly clicking off the days, it's almost Christmas, can you believe that? Who's done with their shopping, decorating, gift wrapping, card sending and that whole Christmas list? I'm getting close, but it was a long weekend of candy making and packaging, plus that last minute decorating that you thought you were done with!!! LOL I've got gift wrapping yet to do, but I'll wrap that up (no pun intended) this week!!! I really am doing my best to enjoy the whole process, what about you? I watched Christmas movies while I made candy and boxed it up...I did quite a lot of laundry this weekend too while watching some of my favorite Christmas movies!!! Isn't it funny how the laundry grows double it's size when your son comes home from college? LOL No matter, I'm just so glad he's home...So here's to a season of lots of memory making!!!

One of my big traditions for Christmas is making candy and this year has been no exception...One of my favorite recipes is something called "Christmas Bark Cookie Crunch Crack" and it's absolutely unforgettable, plus it's so easy to make!! When I take it to a function, I rarely bring any back home with me...Yes, it's that good!!! Plus, I get quite a few requests for the recipe, so I'm going to share it with all of you again this Christmas...It makes an excellent party favor, gift and it's great to take as a snack to any kind of party!!! Get your kids involved and make some this week! You may not have any left by the time it sets, but you'll make lots of new friends and make tons of fun memories...Ok, Let's Go Have Some Fun In The Kitchen, But Make It Quick, Because You've Got Some Life To Live!!! Have A Darcy Diva Travel Down Memory Lane Kind Of Day!!! LOL

Christmas Bark Cookie Crunch Crack

Prep Time: 15 minutes

Ingredients:

2-16 oz bags of white chocolate (I use Ghirardelli white chocolate chips) (Add 2-3 tablespoons of vegetable oil to the bowl of chips before microwaving)
17-Oreos, broken into pieces (I use the regular)
1 1/2 cups pretzels, broken (I use the thin straight ones)
1 cup peanut better chips (Optional, I seldomly use these)
1/2 cup peanuts or cashews
1/2 cup miniature Reese’s cups
1/4-1/2 cups Peanut M&M’s (Christmas Colors)
1/4-1/2 cups Plain M&M’s (Christmas Colors)
Christmas Sprinkles (Enough to add some color)
Directions:
Cover a cookie sheet with parchment paper. Spread the broken pretzels, broken cookies & peanuts on the prepared cookie sheet. Melt the white chocolate in microwave until smooth (1 minute to 1 ½ minutes, make sure to add 2-3 tablespoons of vegetable oil).
Drizzle the melted white chocolate over the pretzel mixture, spreading with a spatula if needed. Before it sets, sprinkle on M&Ms, Miniature Reese’s, Peanut Butter Chips and sprinkles. Place the tray into the refrigerator until set. Break into pieces and enjoy! This is a hit at my parties!!!

Hello and Happy Monday Everyone!!! Why is it that each week I feel like time just keeps moving forward more quickly? Does anyone else feel that way? I suppose all we can do is make it a good day every day and keep our eyes on Jesus!!! Anyone else out there just taking one day at a time getting ready for Christmas and trying to enjoy each moment? Me too, so now I'm just about to finish up my Christmas candy (I just need a day to dip it in chocolate and then pack it in nice Christmas boxes), I need to wrap gifts and I just have a few more things to purchase, but that won't take much time at all...I'm just going to do what I can and make great memories...I suggest all of us make Christmas this year a time to remember and mostly remembering that "Jesus Is The Reason For The Season"!!!

Who doesn't like trying out a new casserole on the family, right? Well, I have one that you and the fam are going to love!!! Wrap your taste buds around this Loaded Chicken & Potato Casserole!! I can almost promise you that you'll be asked on a regular basis, "Mom/Dad, can you please make that Chicken and Potato Casserole that we had last week again?" It's simple, inexpensive to make and it tastes really great too!!! So, Let's Go Have Some Fun In The Kitchen, But Make It Quick, Because You've Got Some Life To Live!!! Have A Darcy Diva Real Deal Kind Of Day Today!!! LOL


Loaded Chicken & Potato Casserole

Ingredients:
 1 lb boneless, skinless chicken breasts, diced
 6 medium, red potatoes, diced
 1/3 cup mayonnaise (I use a can of cream of chicken soup instead)
 1 tsp salt
 1 tsp black pepper
 1 tbsp. Paprika
 2 tsp. garlic powder
 2 tbsp. hot sauce
 2 cups Mexican blend cheese
 1 cup bacon, cooked and crumbled
 1 cup green onion, diced

Directions:
1. Preheat oven to 400 and grease a 9 x 13 baking pan.
2. In a bowl, combine the chicken, potatoes, mayonnaise, salt, pepper, Paprika, garlic powder, and hot sauce.
3. Pour mixture evenly into greased pan.
4. Bake in preheated oven for about 55 minutes making sure to stir mixture every 25 minutes.
5. Remove pan from oven and sprinkle cheese, bacon, and green onions evenly on top.
6. Place pan back in oven for an additional 5-8 minutes, or until cheese is fully melted.
7. Remove from oven and serve!!

Hello and Happy Friday To All Of My Favorite Foodies!!! How is your Christmas preparation coming along? I worked on my Christmas Candy today, which I make quite a lot of...Turtles, Toffee, Cookie Candy Crunch Crack, Chocolate Covered Cherries and German Chocolate Cake Cookies (It's not candy, but it goes in my Christmas Candy Boxes this year!! LOL) I love to watch Christmas movies and make candy, it's part of my tradition and I do it every year!!! Sometimes friends come over and help and sometimes I just do it by myself, which isn't so bad when you have wonderful Christmas movies playing while you work!!! LOL It really helps you get in the Christmas mood!!! I guess I'll finish most of my candy on Saturday and then I have to get gifts wrapped...Who enjoys Christmas and all of the business that come along with it? I do, I do!!! LOL Let's make sure we remember what the true reason for the season is, and that's to celebrate the birth of Jesus...It feels extra special this year for some reason...Do any of you have any special Christmas stories from your past that you would like to share? I'll share some in the next few weeks...I just love Christmas and so did my mom, I certainly miss her sweet smiling face!!! My mom knew how to make Christmas so special every year!!!

Today BLT'S just sounded so good, so who likes BLT'S? I have a yummy and easy BLT that I think your whole family is going to love. I call them Yummy BLT'S and they have a little twist, you make them with Ranch Dressing...It sounds good doesn't it and you want to make one now, don't you? LOL They are simple and you probably have all of the ingredients already, which makes it nice...Ok, Let's Go Have Some Fun In The Kitchen, But Make It Quick, Because You've Got Some Life To Live!!! Have A Darcy Diva Love My Life Kind Of Day!!! LOL


YUMMY BLT'S

Prep Time:5 mins
Total Time: 25 mins.
Serves: 2

Ingredients:
salt and pepper (I use Greek Seasoning)
4 slices tomatoes ( must be ripe and fairly large)
6-8 slices bacon
4 slices bread (or 2 split buns, use your favorite of either)
6 leaves iceberg lettuce
2 tablespoons buttermilk ranch dressing (I use Hidden Valley Ranch)

Directions:
Season the tomato slices with salt and pepper and allow to rest on paper towels to absorb liquid.
In a large cast iron skillet, cook the bacon until crisp (about 15-20 minutes) and drain on a paper towel.
Pour off the bacon fat (but save it for other recipes!) leaving a tiny coating of fat in the pan. Over a very low heat, put the slices of bread in the skillet and warm/toast them on both sides until lightly browned (about 3-4 minutes total).
Remove bread from the skillet and, for each sandwich, top one bread slice with 2 tomatoes, 3-4 slices bacon, 3 lettuce leaves, and 1 tbsp dressing; top with the other bread slice and serve immediately.

Hey Out There To My Favorite Food Lovers...How is everyone doing? Are you ready for the Christmas festivities? I have most of my shopping done, which I still have to wrap...I have some of my Christmas candy ready, but I still have a whole lot to make...I've done most of my decorating, but I still have a couple of trees to decorate...I'm hoping to do a Christmas card, but life won't end if I don't get it done. LOL I'm well on my way to having a successful Christmas, but most of all, I want to focus on and remember what Christmas is really all about and that is Jesus and his birth...There really is no Christmas without Christ, now is there?

“THE BEST” HOT CHOCOLATE MIX EVER

Ingredients:

1-20 oz. Can Swiss Miss Marshmallow Lovers Hot Chocolate Mix (Kroger has their own brand which is less expensive)

1-32 oz. Bag Powdered Sugar

1-20 oz. Box Nonfat Dry Milk (This may come in only larger or smaller sizes)

1-16 oz. Jar Coffee Mate (Plain)

1-3 oz. Jar of Jet-Puffed Mallow Bits-Vanilla (Optional)

Directions:

Mix all ingredients together thoroughly in a large sealable bowl or tub. This batch makes multiple cups of hot chocolate. I give it away as gifts for the holidays and drink quite a lot myself during the cold weather season. If kept sealed this mix will stay fresh for at least a year, but it probably won’t last that long. To make 1 cup of hot chocolate mix 3 to 6 tablespoons of mix with hot water or milk. You’ll love this mix and you will definitely want to share it with others.

Combine ¼ cup Home Made Cocoa Mix and ¾ cup boiling water or milk in cup, stir and enjoy!

A Totally Awesome Thursday To All Of My Foodies Out There!!! What a busy week this has been for me, what about you? Do you feel like you need roller skates on just to keep up? Christmas is soon to be thrust upon us, so the question is "Are You Up For All The Awesomeness That Christmas Has To Offer"? LOL I do have most of my Christmas shopping done and most of the house is decorated, but no picture for our Christmas card yet and I still have my Christmas candy to finish up and then there's wrapping...Quick view of the future... Oh my, I guess I had better get myself in gear and get it done!!!! Christmas will be what you make of it, so take the opportunity to be giving, kind, loving, thoughtful and if you don't get to all of your plans, just don't sweat it, there's always next year and it probably wasn't really that important anyway!!! Don't forget to make those sweet memories, because the time passes by quickly!!!

Pull-Apart Crescent Christmas Tree

• Prep: 20 min
• Total: 45 min
• Ingredients:4
• Servings: 32

Ingredients:
2 cans (8 oz each) Pillsbury™ refrigerated crescent dinner rolls
2 packages (5.5 oz each) garlic & herbs Boursin™ cheese
1 tablespoon butter, melted
2 tablespoons chopped fresh parsley leaves

Directions:
1) Heat oven to 375°F. Line large cookie sheet with cooking parchment paper. Separate dough into 16 triangles. Use kitchen scissors or knife to cut each triangle in half lengthwise.

2) Spoon about 2 teaspoons cheese on shortest side of each triangle. Roll up each, starting at shortest side of triangle and rolling to opposite point. Using photo as a guide, place crescents next to each other in tree-shaped pattern on cookie sheet, starting with trunk and working up to top.

3) Bake 20 to 24 minutes or until deep golden brown. Brush with melted butter; sprinkle with parsley.

Hello and Happy "After Thanksgiving" Weekend Everyone!!! How was your Thanksgiving? We had the best time with friends this year, you know, the kind of friends that feel like family!!! We had lots of food, actually, way too much food and lots of leftovers!!! LOL What about you, did you have a "Thanksgiving To Remember"? I had 13 people at my house and enough food to feed double that many!!! Why do we always cook so much food and have way too many leftovers? I'm just not sure, but it was super yummy, and such a great day!!! I was so tired, but it was so worth the effort, plus I got to see some of my favorite people!!!

With so much turkey and yummy food leftover from Thanksgiving, I started digging through my recipes and came up with this yummy Turkey Cranberry Almond Wrap!! It's simple, tasty and so easy to make...You must try it and especially if you have lots of leftovers too!! Turkey Cranberry Almond Wrap

Total Time: 10 mins
Servings: 4 people

This turkey cranberry almond wrap is the perfect way to use your leftover Thanksgiving turkey and cranberry sauce!

Ingredients:
• 3 cups turkey , cooked and shredded (or chicken)
• 1/2 cup almonds , whole or sliced
• 2 stalks celery , chopped
• 2-3 tablespoons mayonnaise (or Greek yogurt), to taste
• 1/2 cup cranberry sauce (or dried cranberries)
• salt and freshly ground pepper, to taste (I use Greek Seasoning instead of salt and pepper)
• 3-4 large tortillas

Directions:
1. Combine all ingredients together in a bowl. Season with salt and pepper (I use Greek Seasoning, because I love the way it tastes!). Spoon filling into tortillas and roll into a wrap. Enjoy!!!
