Paneer Makhani: Paneer cooked in a rich tomato gravy, butter and cream is absolutely heavenly and a royal feast. This is my closest approximation to one of my favorite dishes when I eat out. Naan is a perfect compliment to this exotic preparation!

Quinoa with Mint Sauce: I love quinoa and I wanted to make something that was flavorful and filling. The earthy, nutty flavor is complemented by a cooling mint and yogurt sauce. This recipe is a healthy dish that can be used as a side or as a light meal. It can be substituted for couscous also.
