Zagat Spotlight: +Dana Cowin, Editor-in-Chief at Food & Wine. We're hosting Dana in a Hangout at 1pm EST today! Comment on this post if you'd like to join the Hangout with her.

And don't forget our NYC Restaurants Survey is open! Vote here to get a free copy of the NYC Restaurants Guide: http://zagat.bz/GZLs7J

What was the last thing you ate?
Grace Parisi in our test kitchen just made an incredible mac 'n' cheese with leftover cheese, ham and three kinds of noodles. It was a perfect lunch.

What's a typical day like for you?
I usually start the day with 1 hour of quiet time to click through email, then brainstorm with the editors about upcoming stories. I taste food from the test kitchen as we work on recipes for future issues. I often review layouts in the afternoon and then have more meetings to discuss trends, chefs, winemakers, what's next. So, in a sense, I just talk, think, look, eat all day long.

Care to share an insider tip for your city?
Lunch is a fantastic time to go to restaurants that are crazy busy at night. The food is just as good as it is at night, it's less expensive and It's easier to get a reservation.

What’s the most exotic food you’ve ever tried?
At a celebratory dinner for Alice Waters around 15 years ago, I ate sheep brains out of a skull.

If you had a one week vacation to anywhere in the world completely free, where would you go and what would you do?
I would go to Japan and explore the extraordinary hyper seasonal food temples from sushi at Jiro to ambitious kaiseki at Nihonryori Ryugin to the elevated French food at Robuchon executed by passionate perfectionists. Then I'd explore the other kind of temples in Japan—the Buddhist ones.

Do you have a favorite celebrity chef or TV show featuring food?
Too many to single one out!

What restaurant got your top score in this year's Zagat New York City Restaurant Survey and why?
Can I cheat and do one in Westchester I had my favorite meal of the year at Blue Hill at Stone Barns (http://g.co/maps/f532e). It is the most perfect restaurant experience I can imagine— a spectacular rustic setting that informs Dan Barber's incredibly creative, delicious food.

How do you de-stress?
I don’t really feel much stress. I just stay focused on moving beyond obstacles, which means I don't give a lot of weight to worrying. I have the world's most fun job and work with an inspiring team in an amazing industry. So mostly I just feel lucky.

What's the best advice you've ever received?
Simplify. Everything in the world benefits from simplicity: relationships, stories, food, business.

The fifth season of AMC’s Mad Men premieres on Sunday night with the usual cast of hard-drinking ad execs in the 1960s. For a Mad Men–themed viewing party, we offer an old-fashioned (below), which is Don Draper’s drink of choice, plus more classic cocktails.
