Aaron Miller, the winemaker at PlumpJack, goes back 150 years to the origins of the vineyard he works with today in Oakville, and gives a thorough and thoughtful, open door look at how he goes about working with the fruit of that vineyard today. Turns out that a lot of the winemaking decisions are actually outgrowths of the soil types within the vineyard. But few people get the chance.
