How cold should chilled storage be?

In the UK, by law, this should be below 8°C. However, it is good practice to keep it at 5°C.

If food is kept higher than 8°C, it must be destroyed after 4 hours, as it cannot be guaranteed safe to eat. Bacteria multiply very rapidly (can be as fast as every 20 mins).
