TASTY TUESDAY: Zucchini “Crab” Cakes
Sorry vegetarians, we let you wait a little while. Can we make it up with you with this awesome recipe? It will taste just like crab except it is vegetarian!

Prep Time: 20 Minutes
Cook Time: 10 Minutes Ready In: 30 Minutes
Servings: 5


INGREDIENTS:
2 1/2 cups grated zucchini
1 egg, beaten
2 tablespoons butter, melted
1 cup bread crumbs 1/4 cup minced onion
1 teaspoon Old Bay Seasoning TM
1/4 cup all-purpose flour
1/2 cup vegetable oil for frying

DIRECTIONS:
1. In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
2. Shape mixture into patties. Dredge in flour.
3. In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.

TASTY TUESDAY: Chicken and Pasta Fresca
It’s been a while till we had some pasta on here. Italy is waiting for us! Or just bring it to your own kitchen.. !

Prep Time: 10 Minutes
Cook Time: 10 Minutes Ready In: 20 Minutes
Servings: 4


Ingredients
3 cups uncooked gemelli or rotini pasta (8 oz)
1 tablespoon olive oil
1 medium onion, chopped (1/2 cup)
1/2 cup balsamic vinaigrette dressing
2 large tomatoes, chopped (2 cups)
2 cups chopped deli rotisserie chicken (from 2 lb-chicken)
1 bag (6 oz) fresh baby spinach leaves
1/2 cup crumbled feta cheese (2 oz)
Directions
1. Cook and drain pasta as directed on package.
2. Meanwhile, in 12-inch nonstick skillet, heat oil over medium-high heat. Cook onion in oil about 2 minutes, stirring frequently. Add dressing, tomatoes and chicken. Cook 2 to 3 minutes, stirring occasionally, until hot. Stir in spinach; cook 1 to 2 minutes or until spinach starts to wilt.
3. In large serving bowl, toss pasta with chicken mixture. Top with cheese.

TASTY TUESDAY: Strawberry-Melon Summer Salad
Are you desperate need for something refreshing in all this heat? This Strawberry-Melon Summer Salad will surely refresh you!


Prep Time: 20 Minutes Ready In: 20 Minutes
Servings: 6

INGREDIENTS:
1 cup lemon yogurt
1 tablespoon honey
1 teaspoon lemon juice 2 cups watermelon balls
2 cups cantaloupe balls
2 cups halved fresh strawberries

DIRECTIONS:
1. In a salad bowl, whisk together the lemon yogurt, honey, and lemon juice until smooth, and gently fold in the watermelon balls, cantaloupe balls, and strawberries. Toss to coat, and serve.
