Jack does not kill the pig because in the beginning of the novel, Jack is civilized. He is used to getting his meat from grocery stores. He has not killed before. Seeing the life leave an animal's body is not like seeing a machine being turned off. One is aware that life ends. Thinking of dying is usually unpleasant. It makes us think of our own upcoming death. Killing something is messy. There is noise, sticky blood, and no turning back. That is why Jack does not kill the pig in Chapter 2.
