Sweet & Sour Pork

REMEMBER!! WATCH YOUR PORTIONS! I have found that many do best when they control their portions rather than deny themselves food!

Ingredients:
3-4 boneless pork chops cut into bite size pieces
1 pkg Tempura batter mix
1 pkg frozen stir fry veggies
Enough oil to fry pork
Your favorite Sweet and Sour Sauce
1/4 tsp ginger
salt
1 Tbsp olive oil

Directions:
Mix up the Tempura batter as directed on package. Heat oil in a large sauce pan or fry daddy.
Salt the pork lightly and then dip into batter and shake it a little, carefully place in hot oil and fry until golden brown. Check one by cutting it down the middle to make sure it is done.
Continue frying pork about 4-5 pieces at a time and place on paper towels to absorb excess oil. Cover with a lid to keep warm.
If you can multi-task, go ahead and heat up the olive oil in a skillet and stir-fry the veggies. If not, just work on the veggies once the meat is finished. Once the veggies are tender and hot, add about 1/2 c of Sweet and Sour Sauce and mix together.

Serve over rice or noodles.

Sausage and Squash Casserole

2 small Squash cooked and mashed
1 Chopped Onion
2 Chopped Stalks of Celery
1 Tbs oil
1 tsp salt
1 tsp Black Pepper
1 tsp rosemary
1 tsp thyme
3 Cloves of Garlic, chopped
1 lb sausage (casing removed)
1 chopped Apple
1 cup Panko Breadcrumbs
½ cup Parmesan Cheese
540 ml (approx 18.25 oz) stewed tomatoes
Grated Swiss cheese (or cheese of your choice)

In a large frying pan heat oil and add onion, celery, salt, pepper, rosemary, and thyme. Cook until onion and celery begin to soften. Add garlic and sausage and continue to cook until sausage is browned. Add apple until slightly softened. Mix in Bread Crumbs, stewed tomatoes and parmesan cheese until incorporated and remove from heat.

Place cooked sausage mixture in bottom of casserole pan. Spread mashed squash over the top and bake in oven at 350°F until completely heated. (About 45 mins). Sprinkle on the grated cheese and return to oven until cheese has melted.

Serve and enjoy :)

SLOW COOKER BAKED APPLES
4 -5 baking apples (I was able to fit 7 smaller apples in mine)
1 tablespoon lemon juice
1⁄3 cup raisins (optional)
3⁄4 cup brown sugar
1⁄2 teaspoon cinnamon
1⁄4 cup butter, softened
DIRECTIONS
Scoop out center of each apple and and leave cavity about 1/2 in from bottom. (I sliced the top half of mine off and used a small spoon to remove the core and seeds.
Peel top of apples down about 1 in and brush lemon juice on top. In bowl, combine raisins, brown sugar, cinnamon, and butter. Spoon mixture into apples. Pour 1/2 c water in sprayed crockpot and arrange apples inside.
Cover and cook on low 1-3 hrs or until tender.
Serve warm or room temperature with vanilla ice cream and caramel ice cream topping.

Sloppy Joe's

Ingredients:
1 pound lean ground beef
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1 medium tomato cubed
1/2 teaspoon garlic powder
1 teaspoon prepared Dijon mustard (or prepared yellow mustard)
156ml (5.5 oz) tomato paste (or 3/4 cup ketchup)
3 teaspoons brown sugar
salt to taste
ground black pepper to taste

Directions:
In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
Stir in the garlic powder, mustard, tomato paste, cubed tomatoes and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.
Use your imagination! You can also add 2 Tbs of HP sauce, replace tomato paste with seafood sauce, add celery, etc.

Need a quick snack or a light lunch. These are light and tasty!

Cucumber Bites

Ingredients:
1 cucumber, peeled and sliced
Turkey deli meat thinly sliced
1 slice of Pepper Jack Cheese
Mustard (optional)

Directions:
You'll only need 1 slice of turkey and 1 slice of cheese to make 4 bites.
Assemble the mini sandwich and add a dot of mustard. That's it!

I like to keep sliced cucumbers in the fridge in a zip-loc bag to have on hand for a quick snack. You can use any meat/cheese combo you like. Roast beef and cheddar is also a favorite.
