you are wrong,this pita will not rise to have a pocket(some maybe,some will not),what is the point of pita bread without the pocket? no need to proof the yeast,unnecessary,just mix it in the dry flour, the key step is to let the bread rise before you put it in the hot-hot oven--missing out of this recipe along with the fact that you will need to bake it on the stone(preheated) or a very hot sheet so it can puff,and no,your dough will not be flat just because you didn't add oil to the bowl--nonsense,how do I make bread without single drop of oil? not all recipes will work because people just like to make things.
