Strawberries are just now coming into season, and they're the ideal topping for +Karyn Granrud's beautiful cheesecake!

On +Dieter's Downfall I've got an amazing Ricotta Cheesecake. This was a first for me. I was a bit nervous about it since I've only ever had cream cheese in my cheesecake. We all LOVED it!!

A lot of how I do what I do is a mystery to many. In this short film, I share a glimpse of what goes on in the making of a 3D cake, and the thought process behind it.

A wonderful film, loved watching it & listening to your thoughts. It's always the tidbits that mean so much more than the actual step by step. As an AMATEUR cake maker, I thoroughly enjoyed it, thank you, +Brooks Walker . xx

Introduction
Brooks Walker is a husband, father, baker, cook, writer and photographer known as Cakewalker from the popular food blog and the dessert specialties he has created for his custom cake business and on the web.

He baked his first cake at the age of eight and has stayed close to the food service industry amassing over 20 years of experience in both front and back-of-the-house positions at various food establishments. Brooks studied for two years in California State University at Pomona’s Hospitality Management program. His schooling led to a position as a garde mange at the famed Ma Maison restaurant in Los Angeles, where he gained training in French cuisine. A subsequent line cook position with Marriott Hotels led to an entry-level management position where he earned a Marriott Corporation Food and Beverage Management Training certification.

Brooks eventually left the hospitality industry and pursued a new career as an on-air radio personality where he lent his voice to various music formats at stations throughout California. He furthered his broadcasting career by working as a Commercial Voice-Over artist where he voiced national commercials for clients such as Ford, Logitech, RealtyOne.com and Red Robin Restaurants among others.

After becoming a father and stay-at-home dad, Brooks attained certification through the Wilton series of Basic Cake Decorating courses. He used his newfound baking skills to garner several First Place and Best of Show awards at several regional county fairs in Northern California, as well as the prestigious California State Fair for his elegant desserts. He was also a Top Finalist in the First Annual Los Angeles Times “Battle of the Burgers” contest which enabled Brooks to show his skills for the savory side of his work.

As for his writing, Brooks has been a Featured Wine Columnist and Photographer for the Folsom Telegraph, and a Music Reviewer for SmoothJazz.com. His blog Cakewalker, photographs and desserts have been featured in various publications including Cake Central Magazine, Los Angeles Times, Sacramento Bee, Orange County Register, National Public Radio (NPR),  Calgary Herald (Canada), and The Pioneer Woman. His work has also been featured by other food and wine sites including Mumm Napa Valley and Point Reyes Farmstead Cheese.

Brooks is a member of the California Cake Club and International Cake Exploration Societé (ICES). He can also be found on social media outlets G+, YouTube, Facebook, Twitter, Pinterest,  and LinkedIn.

This establishment excels in quality nursery plants, supplies and customer service. With an awesome variety of stock, you’ll find healthy specimens that take root and flourish in your garden whether they’re bedding flowers, vegetables or foundation plants. Be sure to ask any staff member throughout the greenhouse for planting tips—they’ll gladly share their knowledge providing information you wouldn’t find on the plant tag or at big box locations. The pricing structure can be slightly higher than national home centers, yet there are many cases where items meet or beat the competition. Truth be told, I’d rather pay a dime and a nickel more for plants that have a leg up on thriving once planted thereby saving me time, than the hit and miss ones at other retailers. A patron-friendly return policy seals the deal and I’ve yet to make use of it.

My first visit to the Gilroy Garlic Festival was all I had hoped it would be—anything and everything garlic. Throw in a picturesque setting, a congenial crowd of enthusiasts and booths to sample garlicky fare; I wondered why I hadn’t attended the event sooner. There's no denying the event is about the culinary bulb and the sensational food derived from it, but this event has activities for all ages, including a Garlic Bowl in a large kitchen stadium. Take your time, stroll around and get your garlic on!

The charm of Canter's begins with its homey atmosphere where the wait staff have personalities that pop and a menu that's nearly as wide as the LA basin. Sandwiches are king here especially the pastrami and corned beef. You'll be cheating yourself out of a treat if you pass the lengthy bakery case at the entrance without purchasing something—you'll likely be full from your meal, but take it home. You'll be glad you did!

Don’t let the offbeat location deter you from the experience of this deli. This is one of those places where you look for the street number on the signage of the commercial lot which appears more industrial than retail, turn in and head for the storefront towards the rear. Once in the shop you’ll notice the classic deli setting and patrons lined up to place orders. Friendly, attentive staff will get you through at a good pace, yet patiently answer questions. The menu is option driven where the customer selects the bread, meat, cheese and all the trimmings. Sandwiches have a base price and add-ons are charged accordingly. The breads are fresh, the vegetables crisp and the meat portions are tasty and generous. A case full of tempting sides awaits you. Thirsty? Check out the beer selection in the self-serve reach-ins. Spiteri’s proudly pours the local brew, Sierra Nevada Pale Ale on tap. Dining is available indoors, out on the patio or for takeout. If you’ve got a hankering for an honest, hearty sandwich with an easy-on-the-wallet price point, Spiteri’s brings it in a nicely executed meal.

The Squeeze Inn is a Sacramento institution put on the map and made famous by its signature "cheese skirt". It's a tasty burger generously mounded with a heap of cheese. Crowds flock to the place and lines can be long but an attentive staff will get you through. With several locations, the experience is worthy of an entry on your bucket list.

A recent hot Saturday afternoon in downtown Sac was an ideal opportunity to stop by Rubicon Brewing Company. It was way past lunch but the place was busy to the point our server couldn’t get to us for a while. She was mindful to acknowledge our party and in my book, open communication from servers goes a long way towards providing good service. We were after a good quality brew and that’s precisely what we found at Rubicon. While there were a good variety of beer styles on hand, including a guest tap, we chose the India Pale Ale. The menu describes this IPA as, “Generous portions of Cascade, Columbus and Chinook hops are added throughout the brewing process to create Rubicon’s Flagship Ale.” This GABF medal winner is golden in color with an initial aggressive hop bitterness that dances nicely over the tongue. The pints were served at proper drinking temperature for the style. And with 6.5% abv, the ale efficiently lifts spirits—so imbibe responsibly. We didn’t order from the menu, but plenty of tasty-looking food was coming from the kitchen. Our server followed through with the promise of attentive service making the experience at Rubicon Brewing Company worthy of repeat visits; definitely for the beer and to check out the menu.

Chuck’s Coffee Shop is a Belmont Shore mainstay where locals know the food and service is consistently good. Breakfast is a big draw but lunch offers up a multitude of choices from classics to soup and sandwich combinations. Slept in? No worries, breakfast is available all hours. Custom orders are welcome too—a patron next to me at the counter ordered scrambled egg whites and a side of cooked spinach for her meal. Wallet-friendly prices together with a friendly atmosphere make this establishment a place you can count on.
