E’Dee 50 pounds and 64” lost, I would say that is one great testimonial.

This is one of the toughest things I have done but I want to share this, I would like to share my weight loss Journey. In August of 2012 I had hit my heaviest weight ever at 220 lbs, I was very unhappy with the person I had become. I hated looking at myself in the mirror because when I did I didn't know the person looking back at me. I had many different struggles going on in my life that lead to a lot of stress that lead to overeating, and being so depressed that all I did was lay in bed, and eat to try and make myself feel better, (it however did not) I had no desire to do anything. The things I loved to do didn't matter to me, nothing mattered. Then one day In August 2012, I had a childhood friend come to visit, I had not seen her in years. I felt defeated each time I tried something, I spent countless of hundreds of dollars of diet pills. This is when she introduced me to Skinny Fiber. <3 Loaded Broccoli <3


4-5 small bunches of fresh broccoli cut into bite size pieces
( Approx: 4-6 cups)
1/2 cup Mayonnaise
1/2 cup Sour Cream
6-8 Slices bacon cooked and cut into bite size pieces
1 Bag Shredded Cheddar Jack Cheese (two cups) or cheese of your choice.
3-4 Tbs chopped fresh chives


Steam or Boil Broccoli Pieces ( I boiled for 10 minutes)
Drain and Let cool
Mix together Mayonnaise, Sour Cream, 1 cup of the Shredded Cheese and half of cut up Bacon, and placed in baking dish that was lightly sprayed with non stick spray,
Top with remaining cheese and bacon pieces.
Cook in oven 400° for 10- 15 minutes until cheese is melted
Top with chopped Chives and serve! ENJOY!!

If you love to crunch and boy do I, you’re going to LOVE, LOVE, LOVE this Asian-style main-course salad. It’s packed with super healthy, fiber rich ingredients. The crunchiness comes from broccoli slaw, cabbage and pea pods. The skinny for each salad, 235 calories, 6 grams of fat and 6 Weight Watchers POINTS PLUS. I could eat this salad every day and sometimes do several days in a row. Try it soon… I bet you will too!!!

Prep Time: 15 minutes

Ingredients for Slaw Salad:

1 (~12 oz ) package broccoli slaw

1 (8 oz) bag purple cabbage (3 cups cabbage)

2 cups cooked chicken breast, boneless, skinless, see shopping tip

2 cup pea pods, chopped

1 cup scallions sliced

½ cup Light Asian Salad Dressing such as Trader Joe’s Asian Style Spicy Peanut Vinaigrette or Ken’s Steak House Lite Asian Sesame Dressing, see shopping tip

Ingredients for Topping:

¼ cup La Choy Chow Mein noodles or any brand, optional


1. In a large bowl, add all the ingredients for the slaw salad except the salad dressing and topping. Just before serving, toss with dressing. Divide among 4 dinner plates. Sprinkle each with 1 tablespoon of Chow Mein noodles and serve with chopsticks, if desired.

Makes 4 main course salads (1 serving, about 3 cups each)

Shopping Tips
One of my very favorite Asian style dressings is Trader Joe’s Asian Style Spicy Peanut Vinaigrette. It doesn’t say Light or Lite on the bottle but it is. It’s really delicious!!! One 2 tablespoons serving has 70 calories and 4 grams of fat.
Another to try is Ken’s Steak House Lite Asian Sesame Dressing. It also has for 2 tablespoons 70 calories and 4 grams of fat.

Vegetarian Tip
To make vegetarian and add protein, you can substitute the chicken with shelled edamame. It taste great this way or just leave out the chicken and edamame and you’ll still love this salad.

"Here it is everyone!!!! I'm 4 months on Skinny Fiber and these are my updated results. I am going to be honest and say how EXTREMELY AFRAID I was to post this, because I have always been very conscious of my body and I was thinking to myself 'I can't believe I am about to go public with this'.....but after some long and hard thinking, I decided this is the best way to show proof of my weight loss and how much Skinny Fiber has changed my life so far!
I began Skinny Fiber on September 30, 2013 and I was pretty much dedicated to skinny fiber the day I started. I set 2 reminders on my phone and make sure I take 2 of them 2 times a day without fail!
Before Skinny Fiber I was always very sluggish, very tired, extremely bloated....all day, every day. I hated the way I felt, I hated the way I looked. I have been up and down with my weight for many many years.....pretty much since my early 20's. After going through some hardship for several years, I had gained almost 100 lbs. I almost don't even remember what I was like in high school without looking at pictures (lol). Over the years I had alot of problems with anxiety....depression....migraines. I would get a lot of dizzy spells.... Basically....I wasn't healthy.

Absolutely Delicious, Skinny Beef And Bean Enchilada Casserole♥

Forget all the tortilla rolling, I’ve got a skinny twist that’s easy to assemble and really, really good. This casserole has many of the same ingredients of a classic enchilada and some updated skinny ones too. For example, instead of adding a large amount of high fat cheese, I’m adding fat free cottage cheese to the layers and only topping with ½ cup of shredded reduced-fat cheese. The cottage cheese adds a rich, cheesy flavor. In addition, I’m using fat free sour cream and very lean ground beef. The skinny for 1 serving, 285 calories, 4 grams of fat and 7 Weight Watchers POINTS PLUS. One full fat serving has 429 calories and 24g fat. Best of all, this Mexican-style dish is loaded with flavor!

Prep Time: 25 minutes (includes browning the beef)
Bake Time: 35 minutes

Ingredients for Enchiladas:

8 ounces (½ of a 1-pound package) extra lean ground beef, I used Trader Joe’s 96/4, see healthy benefits

1 cup onions, chopped

1 clove garlic, minced

1 teaspoon chili powder

½ teaspoon ground cumin

1 (15-oz) can black beans, rinsed and drained

1 (4-oz) can Fire Roasted Diced Green Chiles, see shopping tip

1 cup fat free sour cream

½ cup fresh corn kernels (cut from 1 cob) or ½ cup frozen and thawed

¼ cup fat free cottage cheese

¼ teaspoon garlic powder

8 (6-inch) Mission yellow corn tortillas, extra thin, see shopping tip

1 (10-oz) can enchilada sauce, see shopping tip

Ingredients for Topping:

¾ cup tomatoes, chopped

⅓ cup scallions, sliced

½ cup shredded reduced-fat cheddar cheese


1. Preheat oven to 350 degrees. Coat a 9” square pan with cooking spray. Glass or metal pan is fine.

2. In a large nonstick pan, cook the beef, onions, garlic, chili powder and cumin over medium-high heat until onions are tender and beef is no longer pink. Stir often, breaking up the beef. Stir in black beans, undrained chile peppers and mix well. Remove from heat and set aside.

3. In a small bowl, stir together sour cream, corn, cottage cheese and garlic powder.

4. Place 4 tortillas, overlapping on the bottom of pan. Top with half the meat mixture, half the sour cream mixture and half the enchilada sauce. Reserve topping ingredients until baked. Repeat layers.

5. Cover casserole with foil. Bake for 30-35 minutes, until heated through. Remove from oven, sprinkle with tomatoes, scallions and cheese evenly over the top of the casserole. Bake uncovered for about 10 minutes, until cheese is melted.

6. Remove from oven and let sit for about 10 minutes to set. Cut into 6 servings. Remove servings with a spatula Note: It holds together even better if baked and refrigerated overnight. Just before serving, heat in a 350 degree oven or microwave until hot. Cut into 6 slices.

Makes 6 servings (each serving, 1 slice)

Food Fact
White or yellow corn tortillas are pretty interchangeable in most recipes. The main difference between the two is simply the color of the corn from which it is made. In terms of taste, yellow corn tortillas tend to be a little more earthy and rustic, while white tortillas are a little lighter and finely textured.

Healthy Benefit
Trader Joe’s extra lean ground beef is a terrific, healthy choice. It has 130 calories and 4 grams of fat for 4 ounces. If you can’t find beef this lean, be sure to drain the fat in a colander after browning it. This step will cut the fat way down.

One serving of this casserole has an amazing 9 grams of fiber!

Rinsing canned beans before adding to any dish cut the sodium way down.

Shopping Tips
You’ll find the can of diced Fire Roasted Diced Green Chiles in the Mexican foods aisle where salsa is sold. Trader Joe’s also sells it.

Mission (extra thin) yellow corn tortillas are sold in most supermarkets. They’re only 40 calories each compared to most tortillas at 60 calories. If you can’t find them just use the regular corn tortillas.

Enchilada sauce can be found in the Mexican foods aisle where salsa is sold. There are many types but I used Las Palmas Salsa Para Enchiladas, medium hot. It’s a red sauce.

Prep Tip
To make ahead, assemble casserole as directed except don’t add the topping ingredients. Cover casserole and refrigerate for up to 24 hours. Before serving, preheat oven to 350. Remove plastic wrap, cover with foil and baked for 35-40 minutes, until heated through. Remove form oven, sprinkle with tomatoes, scallions and cheese. Bake uncovered for about 10 minutes until cheese is melted.

Storage Tip
This casserole will keep for a few days in the refrigerator and freezes great. To freeze, cut into individual servings and wrap each well, before freezing.

For those of you who think losing weight is hard you are right but if you are determined like I am nothing is impossible This has been a long journey with a few health issues that makes my progress a bit slower than some but I am winning!! I have been taking skinny fiber for 13 months & not always staying true to it... I will give you that much!! Do I weigh myself ... NEVER!! I measure & go by the way my clothes fit as a matter of fact I even threw my scales out I kid you not as looking at the numbers only made me depressed and less determined to continue .. As ashamed as I feel by telling you all this I went up to a tight 16 could have easily wore an 18 in some things to a nice 10 & even some 8`s .. Do I want to be skinny NO that`s not me I love my curves I want to feel good inside be healthy & not be ashamed of myself when I look in the mirror.. My fatty liver & high enzymes & my high cholesterol amongst other things are screaming with joy since being on Skinny Fiber... I owe it all to my good friend Brandi for coming into my life when I was so down on myself because nothing else had worked for me... When your doctors send you home crying you know it`s time to crack down!!! I am a work in progress & I will continue to do so as long as it takes

My 90 days is here. I weighed 265Lbs. When I began My "Skinny Fiber" Challenge, my Pants size was a 22, I'm now at 230lbs. still shedding the pounds, and my pants size is down to a 20. In the past I tried other diet supplements, they just didn't work out. I still wanted to eat after I just ate. So when I first heard of "Skinny Fiber" I was skeptic about trying it out. Thinking to myself, "Oh, no not another one of those get skinny dream pills." Then I kept seeing posting of Skinny Fiber on my newsfeed, Seeing the results of others made me curious. So I finally tried Skinny Fiber. It’s helped me curb my appetite. I'm finding myself not hungry often. I did change my eating habits. I cut out alot of sweets, like candy bars, sodas, (diet ones as well), chips, I might have a portion size of cake or cookie but I don't go overboard. I cut down on my starch in take too. Haven't had rice! I'm an Island girl Rice is a must have in our meals, but haven't touched it since. Added more veggies, and fruits to my meals. This is just my beginning, and I'm loving it! Last but not least I'm not afraid of stepping on a scale anymore... lol!

This is me Marsha and this is the end of my 3rd 90 day Challenge!!
So far I'm down 89 lbs. !!!
Here are my beginning measurement's and my today measurements
Starting Now Amount lost
Waist- 61 in 45.8 in 15.2 in
Hips 54.1 in 47.6 in 6.5 in
Chest 50.1 in 42 in 8.1 in
With all the other measurement's I take I've lost a total of 50" all over!
I had hit a plateau after my last 90 day challenge and it picked up after I started taking my walks again. I honestly don't know where I'd be today if I haven't giving Skinny Fiber a try, with that and dedication, determination and self control I've come this far and I'm not done just yet!
Before Skinny fiber I would have never been able to get up and walk far the back pain I was suffering didn't allow me to get far before it took me out. My legs were swollen which made it that much harder to get around. I would get shortness of breath and would have to stop to catch my breath. As far as my sleep apnea I haven't been back to have another sleep study test but I can say I sleep through the night without waking up struggling to breath and no longer wake up with headaches. Also I find myself waking up on my back which anyone with sleep apnea will tell you is a no no when you have it. So with that said if I had to take a guess I would say that's gone or way under control! I sleep great at night don't even need sleep aids to get there!
Here is a list of things that since I've been on skinny fiber hasn't bothered me since a week after or no more than a month later just totally stopped bothering me.
My Arthritis in my spine - week later which made it possible to get around
Sleep - within a week or two was taking sleeping pills just to be able to fall asleep.
Swelling in my legs left after a month right after a couple months
Headaches/Migraines after a couple weeks and got over the detox.
I'm off my Cholesterol pills, high blood pressure pills, any and all pain pills, water pills and there are more I can't remember I was on a total of 8 and now only take one for my restless leg syndrome . I can say the restless leg syndrome don't bother me much unless I don't get much sleep!
No more Cramps! (PMS) not even the mood swings that come with it!
Ok I know there is more and I'm just forgetting but I covered a lot that I'm thankful that's gone since I've started my journey with Skinny Fiber.
With that said here is my update! I'm still a work in progress!
Oh and before I forget Hubby Started with me in January of this year and is down 26 lbs.!!!!

Greek-Style Chicken and Roasted Potatoes, Low Calorie and Bursting with Flavor

If you’re looking for a fabulous tasting dish that makes a wonderful presentation, this recipe is for you. So many different taste sensations melded together to create this Greek flavored dinner. It’s chock full of healthy ingredients thanks to using lean chicken breasts, nutritious Greek salad salsa, tossing in a tasty reduced-fat salad dressing and topping with fat-free feta cheese. The skinny for 1 serving, 288 calories, 6 grams of fat and 7 Weight Watchers POINTS PLUS. The regular recipe uses all full fat ingredients and much more cheese, olives, chicken and dressing. It contains 670 calories and 49 grams of fat. You won’t miss a thing with my skinny recipe. It’s really delicious and very satisfying!

Prep Time: 15 minutes
Cook Time: 45 minutes

Ingredients for Roasted Potatoes:

1 pound (1 mesh bag) teeny tiny potatoes (whole) or red potatoes cut in fours, see shopping tip

¾ tablespoon olive oil

Salt and fresh ground pepper

Ingredients to Marinate Chicken:

1½ pounds chicken breast tenders, boneless, skinless

2 fresh lemons

Salt and fresh ground pepper

Ingredients for Greek Salad Salsa:

2 cups grape or sugar plum tomatoes

1½ cup cucumber, peeled and chopped

1 orange or yellow bell pepper, trimmed and chopped

½ cup scallions, chopped, use white and green part

⅓ cup Ken’s Lite Caesar Dressing or Cardini’s Light Caesar Vinaigrette, see shopping tip

2 tablespoon lemon juice

¼ teaspoon dried oregano

Ingredients for Topping:

⅓ cup fat-free feta cheese, see shopping tip

8 Kalamata olives, sliced


1. Preheat oven to 450 degrees.

2. To roast the potatoes-Place potatoes on a baking sheet. Drizzle olive oil all over potatoes and toss to coat. Sprinkle with a little salt and pepper. Bake in oven for about 25-30 minutes until soft and browned. Remove from oven, cover with foil to keep warm and set aside.

3. While potatoes are roasting, place chicken tenders in a bowl. Squeeze the juice of 2 lemons all over the chicken. Sprinkle with a little salt and pepper. Place in the refrigerator to marinate for 15 minutes and up to 2 hours.

4. To make the Greek salad salsa-Place all salsa ingredients in a bowl and toss with dressing, lemon juice and oregano. Refrigerate until ready to serve.

5. To cook chicken: In a large nonstick pan, heat 1 teaspoon oil. Add chicken and cook about 3 minutes on each side over medium-high heat until completely cook through.

6. To serve: Add the chicken to a large serving plate. Place the roasted potatoes all around. Top with Greek salad salsa. Sprinkle all over the top with feta cheese and olives.

7. If you don’t plan to serve this dish all at once, only toss in dressing the portion you’ll use and store the leftovers separately in the refrigerator. Toss the remaining Greek salsa when ready to serve the next day. Left-overs are yummy to pack for lunch!

Makes 5 servings (each serving about 2½ cups)

Shopping Tips
I found a mesh bag of teeny tiny potatoes at Trader Joe’s. Look for them at your supermarket or use small new potatoes (red potatoes) un-peeled and cut into four’s.

Fat-free feta cheese is sold in most supermarkets either in the cheese aisle or deli’s gourmet cheese section. Trader Joe’s also sells this cheese.

Ken’s Lite Caesar Dressing and Cardini’s Light Caesar Vinaigrette can be found in the salad dressing aisle of most supermarkets.

Amish Friendship Bread♥

First you will need to make the starter for the bread.
This will take 10 days.
2 ¼ tsp. (1 package) active dry yeast
¼ Cup water
1 Cup flour
1 Cup sugar
1 Cup warm milk
Do Not Use Metal Bowl or Metal Utensils
Day 1
Combine yeast and water, and let sit for 10 minutes.
In a 2 quart plastic, glass, or ceramic container, or in a gallon size Ziploc bag, combine sugar and flour. Mix well. Add to this the milk and yeast mixture. If using a bowl, mix ingredients well and cover loosely. If using Ziploc bag, seal tightly and squish bag until well mixed.
Leave on a counter; do not refrigerate mixture during fermentation process.
Days 2-4
Stir starter with wooden spoon, or squish bag daily. If using a bag, open to let air out and reseal.
Day 5
Stir in 1 cup flour, 1 cup sugar, and 1 cup milk. Mix well.
Days 6-9
Stir starter with wooden spoon or squish bag daily.
Day 10
Stir in 1&1/2 cup flour, 1&1/2 cup sugar, and 1&1/2 cup milk. Mix well. Remove 2 cups starter mixture to make your bread (recipe follows), and keep one for yourself to start process again.
Divide the remainder starter mixture into 1 cup portions to give to friends along with a copy of this recipe, or store in the refrigerator and begin the 10 day process over again skipping day 1, starting at day 2.
You can freeze the starter in 1 cup measures for later use.
Frozen starter takes 3 hours at room temperature to thaw before using. If the starter isn’t passed on the 10th day be sure to date the bag so the friend can determine where they are in the process.
Amish Friendship Bread
1 cup starter
1 cup oil
3 beaten eggs
½ cup milk
1/2 tsp. vanilla extract
2 cup flour
1 cup sugar
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
2 tsp cinnamon
1 large package vanilla instant pudding mix
Nuts, optional
Raisins, optional
Dates, optional
Cinnamon sugar
In a large non metallic bowl combine starter, oil, eggs, milk and vanilla.
In a separate bowl combine flour, sugar, baking powder, baking soda, salt, cinnamon, and vanilla pudding mix. Add to starter mixture, and mix well.
At this point add your nuts, raisins, or dates. About 1 cup total.
Grease 2 loaf pans and sprinkle bottoms liberally with the cinnamon sugar.
Pour the batter into loaf pans, and sprinkle with more cinnamon sugar.
Bake 325* for 1 to 1 ½ hrs or until toothpick inserted in the middle comes out clean. Cool 10 minutes before removing from pan.
Chocolate Bread- Omit the Cinnamon & Vanilla Pudding
Add 2 tsp Cocoa.
1 Cup Chocolate Chips
1 Large Box Instant Chocolate Pudding
Lemon Poppy Seed Bread- Omit Cinnamon & Vanilla Pudding Mix
Add 1 Large Box Instant Lemon Pudding
1 Tbsp Poppy Seeds
To make 2 different loaves, omit cinnamon & large box of pudding, divide dough in half. Use a small box of instant pudding mix of choice per loaf.

1 cup frozen mixed berries
1 ripe banana (can be frozen)
1 Tbs Hemp Seed
1 Tbs Almond Butter
2/3 cup Pomegranate Juice
3/4 cup Water
1/2 Almond Milk
Combine all ingredients and blend well
