We used the bananas from our Organics Live produce box to make these yummy muffins. Enjoy as a healthy snack or a nourishing breakfast! +Organics Live, Inc. 

Banana Chocolate Chip Muffins

What’s In It?
1 1/2 cups organic spelt flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/2 teaspoon sea salt
2-3 ripe bananas (depending on size)
1/2 cup rice milk
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/3 cup applesauce + 1 tablespoon ground flax
1 cup chocolate chips

How It’s Made?
1. Preheat oven to 350F. Use a large bowl for the dry ingredients. Then mix wet ingredients into dry and fold slowly, mixing until there are no lumps remaining. Stir in chocolate chips.
2. Drop by spoonfuls into an oiled muffin tray or pour batter into a loaf pan.
3. Bake for 20 minutes if making muffins, or 30-40 minutes if making a loaf.

Twice Baked Curried Sweet Potato

What's In It?
2 medium sweet potatoes, washed and pierced in the center with a fork
1 teaspoon fresh ginger, finely grated
½-1 teaspoon madras curry powder
½ teaspoon turmeric powder
Pinch of cinnamon
1⁄8 teaspoon sea salt
1 teaspoon extra virgin olive oil

How It’s Made?
1. Preheat oven to 400F. Cut sweet potatoes length wise and place on a low sided roasting pan and bake for 30-45 minutes or until soft.
2. Remove potatoes from the oven and allow to cool.
3. Scoop out center flesh, leaving 1⁄4-inch rim of sweet potato attached to the skin (this will help hold skin together).
4. Place flesh in a bowl and mix the remaining ingredients. Stir until smooth and creamy.
5. Refill potato skins with mixture, place on baking sheet and bake until heated through and slightly golden on top. Serve hot.

This week we used the mushrooms and onions from our +Organics Live, Inc. produce box to make the topping for this delicious raw pizza! Top with goat cheese or your favourite cashew cheese and voila!

Marinated Mushrooms and CaRAWmelized Onions

What’s In It?
1 pound of cremini or baby bella mushrooms, sliced
2 tablespoons San-J tamari
2 tablespoons olive oil
½ tablespoon oregano
Allow to marinate for at least 20 minutes (to one hour).

1 red onion, thinly sliced by hand or on mandolin
3 tablespoons olive oil
2 tablespoons San-J tamari
1 tablespoons maple syrup or date syrup
Sea salt
Allow marinating for several hours – to fully breakdown.

Can also be dehydrated for one hour until warm or longer to make crispy (serve on salad or raw pizza crust).

Place veggies on zucchini pasta or sprouted pizza crust with either tomato tapenade or pesto sauce!

We used the yams from our +Organics Live, Inc. produce box to make this delicious loaf! Good to eat for breakfast or a healthy snack but fair warning, you may want to double the recipe as they are that good!

Yam Pecan Cranberry Loaf

What’s In It?
1 yam (about 1 cup) cooked and mashed
1⁄2 cup grapeseed or coconut oil
3⁄4 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
1⁄2 cup vanilla rice milk
5 tablespoons orange juice, freshly squeezed
3 tablespoons orange rind, grated
2 cups whole spelt flour
3 teaspoons baking powder
1⁄2 teaspoon fine sea salt
1⁄2 cup dried sweetened cranberries
1⁄2 cup pecans, coarsely chopped

How It’s Made?
1. Preheat oven to 350F. Steam or boil yam in water in medium saucepan and cook until soft.
2. Strain the yams and mash them with a masher.
3. Add the oil, syrup, vanilla, vinegar, rice milk, orange juice and orange rind to the yams and mash the ingredients together thoroughly.
4. In a large mixing bowl, combine flour, baking powder and salt.
5. Pour the yam mixture into the flour mixture and gently stir them together until all the flour is incorporated into the wet mixture.
6. Fold in cranberries and pecans.
7. Scoop mixture into an oiled and floured bread pan. Place the pan in oven and bake for about one hour.
8. Use toothpick to test readiness, this loaf is done when the toothpick comes out clean. Let the loaf cool in the bread pan on a wire rack before removing.
