People think I'm a hardass about food traditions, but then they find out that I'm quite accessible and kinda funny too.

Chinese beef pho! It exists and is a crazy bowl. You can add Sichuan peppercorn or some of that homemade chile oil and pickled mustard greens! The recipe from a new Yunnan cookbook is on the blog. You can make in less than an hour in a pressure cooker or multicooker (e.g, Instant Pot or Fagor Lux). Check it out!

While you're out and about, duck into a Chinese or Southeast Asian market to grab a bag of Chinese mustard greens for this delicious and simple pickle.

Instead of the conventional deep-fry treatment, I air-fried this chicken. It's stupendously easy that way and super tasty too, with beer, rice, whatever you like. Why wait till you go to a restaurant for Japanese fried chicken?!!!

Along with this easy and very cheffy crispy rice dish, I cooked an amazing steak in the air-fryer. It was fun and barely dirtied up the kitchen. The recipes are from a great new cookbook called "Air Fry Every Day" by Ben Mims.
