Tried this very traditional and forgotten Mangalorean recipe that calls for semi matured coconut, jaggery, eggs, semolina and flour to result in one of the most delicious, moist and fluffy cakes you've ever tasted! So the next time you buy a tender coconut, the flesh of which has begun to harden and can no longer be scooped out like jelly, you can still enjoy it in the form of this delectable cake!
