RECIPE SHARE - CHICKEN & CHORIZO PAELLA] 
Last night was the BIG Murray Family dinner night. A weekly tradition where our family gather & cook up a storm in a We Do Kitchens renovated kitchen (of course)

We thought we would start to share our recipes so your family can too enjoy a special family night meal in your new WDK renovated kitchen :)

INGREDIENTS
2 cups (500ml) chicken stock
1/2 cup (125ml) dry white wine
2 tbs olive oil
1 pinch saffron threads
2 chorizo sausages, thinly sliced
4 (600g) chicken thigh fillets, cut into 2cm pieces
1 red onion, finely chopped
1 red capsicum, seeded, finely chopped
2 ripe tomatoes, finely chopped
2 tsp sweet paprika
1 cup (150g) fresh or frozen peas
2 garlic cloves, crushed
Fresh coriander sprigs, to serve
1 or 2 Red Chillis
440g (2 cups) of a medium grain rice
2 Lemons

METHOD
Step 1
Combine stock and saffron in saucepan. Cover with lid. Bring to the boil over high heat. Reduce heat to low and hold at a gentle simmer.

Step 2
Heat 1 tablespoon of oil in a 38cm (top measurement) paella pan over medium-high heat. Cook the chorizo, stirring, for 4-5 minutes or until browned. Transfer to a bowl.

Step 3
Heat remaining oil in pan. Cook capsicum, onion and garlic, stirring, for 5 minutes. Add chorizo, rice and paprika. Cook for 1 minute or until well combined.

Step 4
Reserve 125ml (1/2 cup) of stock mixture. Add remaining stock to the pan. Do not stir. Bring to the boil. Reduce heat to low and simmer, without stirring, for 20 minutes or until the rice is tender and firm to the bite.

Step 5
Arrange tomato, cut-side up, over the rice mixture. Gently push the tomato into rice mixture. Ladle over the reserved stock. Cook, without stirring, for a further 5 minutes or until paella is slightly moist but not soupy. Remove from heat. Cover with a clean tea towel. Set aside for 5 minutes to rest. Top with coriander and a squeeze of lemon to serve.
