Healthy dinner for four !
INGREDIENTS
20 oz Salmon Cut into 1-inch cubesc
24 Cherry tomato
3 tsp Rosemary Fresh & minced
4 tsp Extra-virgin olive oil
2 tsp Lemon juice
3 cloves Garlic Minced
1 Lemon Sliced
Salt to taste
Pepper to taste
12 Skewer
HOW TO COOK
1. Preheat grill or skillet to medium-high heat.
2. Combine olive oil, rosemary, garlic, and lemon juice in a bowl. Add salt and freshly ground black pepper to taste; whisk everything together.
3. Add the salmon and zucinny with pepper and marinate for 30 minutes.
4. Load the skewers, alternating zucinni and pepper with salmon.
5. Cook the skewers until the salmon is well done.
6. Turn them carefully to avoid breaking the fish.
7. Serve with a fresh slice of lemon and lettuce
