It was just amazing on it's own. Next time we get a chance to make this bread bowls are totally in the picture but this time, alas, our chowder was lonely. Also, on a side note, this chowder was amazing as leftovers for lunch yesterday as well.

My question  is how did the spicy curry cauli-rice pair with the sweet salmon? Complementary, or too much opposition?
Ingredients 1/8 cup pure maple syrup 1/8 cup honey 1/4 cup soy sauce 2-3 cloves minced garlic 16 ounces fresh or thawed salmon (You can do 1/4 cup of either maple syrup or honey if you prefer one over the other or just don...

Personal note: I think Zatarains boxed foods have WAY too much salt to begin with. Even though you used a lot of extra seasoning (accidentally?) I bet the Zatarains started you with something far too salty. I'd avoid the pre-boxed stuff if you want less salt.
Ingredients 1 box Zatarains red beans and rice 1 half sausage 7 oz. cooked, tail-off shrimp 1/2 tablespoon creole seasoning (we used 2 TBS, see results below) Hot sauce to taste (we used Sriracha) Instructions Start red b...

That's about 45 minutes from where I'm living this fall! I think I'll need to hoodwink some friends into letting me go there (not having a car is not fun, esp. being in E-ville)

Did you cook this originally with pre-cooked shrimp? Or did you try this a different time with pre-cooked shrimp and experience difficulty?

I don't really have a favorite; I definitely prefer chunkier sauce so that kind of puts most Ragu out of the running but other than that I tend to buy whatever is on sale. When we had our garden, the one time we were actually in town at the right time to harvest, we made some pretty kick-ass homemade sauce.

What is your opinion on identifying brands in your ingredients? I see that this was done above-- and I assume that's because it came from the party Katie went to. Do you think it matters?
Ingredients 2 lbs cubed lamb 2 teaspoon Wildtree Opa! Greek Seasoning Blend 2 Tablespoons Wildtree Natural Grapeseed Oil 1/2 Tablespoon lemon juice 1 teaspoon salt Assorted chopped vegetables (1 onion, 2 peppers, 1 8oz packa...

Generally speaking I don't think it matters. I only try to call out brands when I think it makes a difference in the outcome or flavor, e.g. the Zatarain's plug in the jumbalaya fiasco or listing Wildtree above. I'm think Katie's reason's for listing Wildtree are two-fold, 1. because it came from the party and 2. because we aren't sure if there are other brands of "Greek" blend seasoning. My reason for calling out Wildtree is that their spice blends have been noticeably bland and have required an extreme heavy handedness to get the desired flavors.

Jackie: I agree with Potter that the salt and pepper helped a lot. Mostly it brought out the flavors that already existed in the pot. Personally, I would have liked something more spice-prominant, like rosemary or thyme. However, the meat and veggies were all cooked very well. I thought the beef was tender, and yet the potatoes and carrots were still solid enough for my preference. Nothing fell apart on you. All in all-- delicious.
Thanks for inviting Dave and I over to participate in your experiment!  :)
