Mango Chipotle Flank Steak

1 ½ to 2 LB Flank Steak
4 Limes, Juiced
2 Chipotle in Adobo
6 oz Mango Jam
1/2 tsp Fresh Cilantro
Kosher Salt
Cracked Black Pepper
 
 
Keeping it simple, is always better.  Liberally season your flank steak with kosher salt and cracked black pepper. Place the steak in a large resealable plastic bag and add the lime juice. Toss in the bag to ensure steak is covered with lime juice and refrigerate for 30 minutes.
 
 
Combine mango jam, cilantro and chipotles in food processor, blitz until blended well and a smooth texture.
 
 
After 30 minutes, pre-heat your grill. Remove the steak from the bag and allow it to come to room temperature, about 10 minutes. Re-season with cracked black pepper and grill on high heat for 3 to 4 minutes on first side. Flip the steak, coat with Mango Chipotle Glaze and continue to grill another 3 to 4 minutes to achieve medium-rare. Flip the steak again to apply glaze to reverse side, remove from heat and allow to rest for 10 minutes before slicing.  
 
 
Be sure to slice the steak across the grain.

Have you ever taken a steak off the grill, cut right into it and were left with a puddle of blood and juices?

It’s because you didn’t give the meat time to rest. When you cook beef all the juices are forced to the center, resting after cooking will allow those juices to be redistributed. When it comes to resting times you may get a different story depending who you ask, but the only “fool proof” way to know when something is properly rested is with a thermometer. When the internal center temperature reaches 120 degrees, your beef is rested and ready to slice.

I have been using RJ Shore Automotive for a number of years now and although I always praise them on social media sites, I never wrote a review here. From oil changes to breaking down and needing a tow, the people at RJ Shore have always been there for me. The work they do is affordable and done right the first time. They even have someone who will drive you home and pick you up (if you need it) so you don’t have to sit there waiting. I wont bring my vehicles to anyone else!
