I couldn’t believe I was going to do this and almost chickened out on the day. Oh boy, am I thrilled that I built up the courage! It was nothing short of amazing floating above Lion’s Head, with the iconic landmark mountain in the background and views of the turquoise Atlantic Ocean below me. What an absolute WOW!

I crave food that fuels me and keeps me full for longer. Lentils are a good source of potassium, rich in fibre and protein, and also very quick and easy to prepare. You can cook a batch of lentils and freeze them for the next meal, especially if you lead a busy lifestyle and are pushed for time.

Gosh I love food! My amazing Green Goddess summer salad is filled with lots of healthy ingredients like avocado, pomegranates, walnuts and cucumber. This salad is bursting with flavors and goodness, and paired with the most amazing dressing that is going to blow your mind.

By the way, I’ve only recently fallen in love with avocado… I can’t believe it took so long! I couldn’t stand the creamy texture, but after a few attempts, I find myself addicted to these good boys. Avocados are a superfood, providing the good fats your body needs. What’s more, they can be eaten with anything, at any time of day – or night!

Eating tropical fruits brings back great memories of my holiday in Thailand, where succulent mangoes are plentiful. I decided to create my own take on a tropical smoothie bowl by adding coconut water (to make it extra delicious), and a topping of my favorite fruits.
