Salmon with lemon caper butter is marinated and grilled to perfection. This is an easy dinner to prepare, but will impress your guests at your next cookout.

Salmon cooks quickly because it has a naturally high oil content. Watch the sear marks carefully: if they are too dark on the first flip, turn down the burner so you don’t overcook the flesh.

This is a camping variation of the American Ruben sandwich which has the corned beef and sauerkraut classic being grilled over the open fire before being eaten.

Using the classic combination of corned beef, Swiss cheese, sauerkraut and Russian dressing on rye bread, ingredients can be substituted out to what you have available or other know variations such as the Montreal Ruben using smoked meat for the corned beef; Lobster Reuben, or Rachel sandwich that substitutes the corned beef for pastrami and sauerkraut for coleslaw.

You may be surprised how much you like grilled beets, even if you’ve never had a beet before. Not only do they add great color and flavor to the grill, they are super nutritious. Beets are a root vegetable, like potatoes, and are grilled using a similar technique. They have a lot of natural sugar, which caramelizes beautifully on the grill.

Perfect for picnics and day hikes, lamingtons are one of my all time favorite cakes. Probably one of the top 10 iconic Australian foods, I’ve had to create a good recipe so I can make them wherever in the world I am. In their simplest form, a lamington is a square piece of sponge cake covered on all sides with a liquidy chocolate icing, then covered in desiccated coconut.
