In the old days, people would bring their tiffins to buy this from street vendors who would peddle their food from street to street carrying their entire 'stalls' on long wooden poles across their shoulders. I learnt this recipe from my Mexican neighbour when we were living in the UK many years ago. This chunky Mexican Beef stew is slow-cooked in a hearty tomato-based gravy for 3 hours to get a tender, succulent and gelatinous texture! Served with Mexican rice infused with olive oil, tomato, garlic and onions, and topped with raisins.
