I never been higher then 70% tried to handle the dough like any other, ended up with more dough in my hair, face, hands and floor then in the loaf, that was a big learning curve ;-)

Finally had some free time to make some bread. It was nice to have the house smelling of freshly baking bread again. These two loaves didn't get as much oven spring as I would have liked but I guess that is spelt for you. 66% spelt 16% whole wheat 16% white

Here is what the crumb looked like. Flavor wise I didn't really taste the spelt all that much. The soaker and the double hydration made the crumb very light and springy.

+Edward Bernard Funny! That's the method I intend to use today since the outline of a recipe I'm working on didn't give a water amount. I have added water like this many times. It works very well by using the wet-hands and wet counter top kneading method.
