I do this too. However, I find that it is harder to compare candidates than when using short-answer academic questions. so I do those for about 1/2 the interview.

Thanks +Andrew Peterson I was mostly joking. The symbols I'm referring to are from http://en.wikipedia.org/wiki/Icelandic_magical_staves and are not in unicode, though they are included in TeX extra fonts.
