I had the pleasure of making these Chocolate Cupcakes with blue Italian Meringue Buttercream for a baby shower this weekend.  The cupcakes bake up with flat tops, making them the perfect platform for festive swirls of the silkiest, best tasting buttercream you can imagine.   The cupcake recipe will make 36.  You'll have to double the buttercream recipe to decorate them all, but you'll be left with a few cups of buttercream to freeze ...

our family's favorite lumpy spuds
our favorite 'lumpy spuds"
http://www.butteryum.org/blog/2015/4/4/lumpy-spuds-1
I don't know about your family, but we love our mashed potatoes lumpy.  We like to keep the skin on our potatoes too.  Have I lost you yet?  Lol.  Have no fear, if you prefer smooth mashed potatoes with no skins, peel them and mash them until smooth or press the potatoes through a potato ricer.  Lumpy Spuds makes 5 pounds Printable Recipe Ingredients * 5 pounds red skinned potatoes, scrubbed and cut into 2-inch pieces ...

What do you do when your homemade pita bread doesn't puff up?  Make pizza!  http://www.butteryum.org/roses-alpha-bakers/2015/4/2/pita-pizzas-the-bread-bible
Some of the Alpha Bakers have begun baking through The Bread Bible by Rose Levy Beranbaum.  This month's selection is Pita Bread.  My pitas didn't puff so I decided to turn them into pizzas after reading that this recipe was a variation of Rose's pizza dough.   The dough is a snap to make.  Just dump everything in a stand mixer bowl and mix with the paddle attachment until the ingredients are combined. Done. Then switch out the p...

So I caved and gave in to one of the craziest food fads ever.
Have you been seeing the crazy coffee concoction all over the internet that combines black coffee with coconut oil and butter?  I know, I know.  It's CRAZY! Who in the world would ever think of such a thing?  I suspect the coconut oil industry - lol.  I mean, it's so bizarre and weird and intriguing that you just have to head into the kitchen to give it a try.  At least that's what I was thinking.   So I did just that.  I made it and...

Individual Cherry Crumbles
3.14 was Pi Day - did you bake a pie?  I made this cherry pie with lattice crust to bring to a church lunch.  I also made these mini cherry crumbles for us to eat here at home.  Crumbles are kind of like pie, right?  I think they're actually a little easier to make than pie.  Plus making them gave me a chance to use a single can of Oregan red tart cherries that had been taking up valuable space in my pantry.   Individual Cherry Crumb...

We had a couple of steaks leftover from dinner one night so I made Steak and Eggs for lunch the next day.  It's a really wonderful combination that makes a very hearty meal.  Here's how I made it.  First you'll need to grab your leftover steak from the fridge.  We're going to use both the steak and any drippings that have accumulated in the storage container so be sure to save them. Slice a couple of small to medium sized onions int...

Hot Cross Buns - ButterYum I have one word for these - Delish!  The recipe comes from Rachel at The Traveling Spoon who spent an exorbitant amount of time searching for the traditional Hot Cross Buns of her childhood in England.  Rachel is a purist and says these are the real deal.  She also says traditional hot cross buns never have icing crosses - the crosses you see here are made from a sweetened flour paste that is piped on just ...

We cannot stay away from these Cheesy Spinach Egg Cups
These Cheesy Spinach Egg Cups may be small in size, but they're big on flavor! They're completely addictive and we can't stay away from them,  So simple to make too.  Here's how. Start by preparing a mini muffin pan by spraying it with Baker's Joy.   Next we'll melt some butter in a skillet and add the spinach, salt, pepper, and dried marjoram. Saute, stirring frequently, until the spinach is dry and starts to brown a bit.   R...

I've been pretty busy this week, but I wanted to take a moment to share these jello eggs with you guys.  I came up with the idea of making them when my kids were young.  I usually make them at Easter time, but they're fun any time of the year.  I start with these egg molds.  I got mine at the grocery store about 15 years ago, but you can find them online and occasionally in thrift shops.  I've also seen molds that make egg halves ava...

Happy St. Patrick's
Bailey's Irish Cream and Pistachio Fudge - ButterYum Time of this month's Crazy Cooking Challenge - FUDGE!!  My selection, Bailey's Irish Cream and Pistachio Fudge.  It's so good, and it's so easy to make - it takes about 10 minutes from start to finish, requires only 4 ingredients, and there's no need to use a candy thermometer.  I found the recipe on the blog Eat Good 4 Life by Miryam.  She also has a tempting Kahlua and Da...

Sour cherry pie with a lattice crust - review and tutorial.
Welcome to week 16 of the Alpha Bakers bake-a-long, an online project where a group of food bloggers bake our way through The Baking Bible by Rose Levy Beranbaum.  Most of the recipes made during this project will not be shared, but I will post my commentary followed by a full photo tutorial. This week's selection - Sour Cherry Pie (Pi Day).  A ruby red cherry filling cloaked in a lattice patterned cream cheese enriched pastry.    S...
