Hello thanks for the vids, i am learning a wealth of knowledge watching your restoration and cooking techniques.  I am starting to buy cast iron cookware since most of my pans are warped.  What size skillet do you believe is best for all around versatility?  I am a noob to the cast iron world of cuisine. In addition, if i do buy the skillet, is it wise to buy the lid or just leave it be?

Jerome - for all around versatility, I like a 12" skillet. Although I have a ton of vintage skillets and many different brands, my Lodge 12" gets more use than anything else. I do like a smooth skillet for things like eggs, but if I use enough fat, I have had great success in making eggs in Lodge skillets.

I have about for lids that will fit the pieces that I might put a lid on. Outside of dutch ovens, it is a rare occasion when I will put a lid on a skillet. If buying Lodge skillets, you can always get the lid later.
