Hello folks.  Guess what?  Winemaking Wednesday is back!  This week, Grant explains the the science behind the production and use of oak barrels.  Enjoy!

http://bestcoastwines.com/our-blog/2015/4/7/winemaking-wednesday-the-science-and-magic-of-barrels-pt-2
In part 2 of our 3 part series about barrels, Grant explains a bit about the science behind an oak barrel... Barrel Production and Science A row of 'barriques'.  More wood contact = more oak flavor. Each barrel is shaped, fitted, and toasted by hand over an open flame by an artisan called a ‘cooper’. The result is a liquid tight, savory masterpiece. Since oak wood is porous and breathable, the barrel is not  actually ‘air tight’. ...

Grant's finally done with harvest, closing the books on another great vintage in California!

On the blog today, Grant shares his closing thoughts and a few funny stories from harvest 2014:
The last empty barrels of the year, waiting to be filled with the wonderful wines of the 2014 vintage The final punchdowns are done and the last of the juice is in barrel. Even the late harvest Sauvignon Blanc is steady and ready for racking.  This year's harvest in California was early, hot and heavy.  Due to the lack of rain and the steady warm temperatures throughout summer, everything seemed to ripen quickly and all at once. It ...

Check out the thrilling conclusion of Grant's harvest blog series:
In the third and final part of Grant’s harvest blog series, we rejoin our grape must, about to undergo the transformation into wine… Step 3. Fermentation When the must has been inoculated, fermentation is kick-started to action. The yeast eat the sugar, producing byproducts of alcohol, carbon dioxide, and heat. When a fermentation batch is at its peak, temperatures in the wine can climb above 100 degrees Fahrenheit.  While the must ...

Happy Tuesday afternoon folks! Not sure what to have for dinner tonight? If I may suggest:
Growing up in Chicago, this was a favorite recipe for my family, which we made twice a week for my entire childhood.  Pair this dish with our Zinfandel and a Netflix movie, and you’ve got the perfect weeknight date, for under $40!  You’ll even have leftovers for breakfast (my mother called this ‘Italian coffee cake’, since it is even better the next day, and totally not weird to eat pizza for breakfast). Enjoy!   Prep time: 5 ...

Ever wonder how barrels work?  Grant shares some fun facts and science this week on the blog. #winemakerwednesday #winewednesday #ithinkthisishowhashtagswork
For the next three weeks on Winemaker Wednesday, we’re going to learn a bit more about that most mysterious tool of the winemaker’s trade: the oak barrel. Wineries need LOTS of barrels to make certain styles of wine. Let’s start out with a little bit of math.  One standard wine barrel holds 60 gallons of liquid. This equates to about 25 cases of wine or... hold on let me do some math.... (25 cases) x (12 bottles/case) x (5 glasses/b...

Get those bubbles ready for NYE...

In preparation for New Years Eve, Grant explains what makes wine sparkle, so you can impress all of your friends with some knowledge and a few facts...
It’s that time of the year again when the bubbles start coming out.  Sparkling wine makes for the perfect celebratory beverage.  It tickles the palate and goes great with food.  Really, what’s not to love? We wanted to give everyone a quick primer on sparkling wine, so you know what went into that bottle you pop on New Years Eve. Remember, first, that all sparkling wine is not ‘Champagne’.  Grant enjoying his bubbly in a cave. M...

Virginia wines? Sure, why not!

Nick spends a day in the oldest of America's wine regions:
The vines at Pollak Vineyards, right before harvest.  I was in Charlottesville, Virginia for the wedding of our dear friends Karen and Phil, and had the chance to have a drive through Virginia wine country, visit a winery, and try some of the local vino.  It’s a very cool trip if you find yourself in the area.  Virginia wine country is gorgeous, the wines are quite delicious, and the entire region is overlaid with the history of some...

In part two of Grant’s harvest blog series, we rejoin our grapes in the winery…
In part two of Grant’s harvest blog series, we rejoin our grapes in the winery… Step 2. Grape crushing time The grapes waiting outside Winery SF (with the Bay Bridge in the background) From the sorting table, the grapes run straight into the crusher. Stems are removed during crushing, either by hand or by a fancy modern machine called a ‘crusher destemmer’ that, as you might imagine, performs both functions at the same time. Th...
