Tomorrow is May 5th, also known as Cinco De Mayo, a day of celebration for The Day of the Battle of Puebla.

Recently the guys from Brewing TV were in town. They wanted to film Justin (The Brewing Network) brewing a beer and asked if I could provide some food. What better dish than Nachos to serve to a bunch of beer geeks, while they are brewing a beer?!?!?! Extreme Beer Nachos?

Easy and super tasty recipe for the Superbowl.  Roasted or grilled this Beer Brined Chicken can be sliced for a main course,  shredded for tacos or to go over nachos, and can be made into a pulled chicken sandwich with IPA aioli.

Doing a really fun dinner tomorrow, with a medieval theme. One of the courses is a suckling pig. Sure just slow roast in , but instead I went a little nuts. Made a dried apricot roasted shallot orange marmalade chutney. The deboned a suckling pig, seasoned with a custom Home Brew Chef Pork Magic Dust, then did a pin wheal of pork loin filled with chutney, ground jowls with chutney and packed that around the loin, then stitched it all up to look like a little pig again. Marinating for 24 hours to cure and then slow roast for a real show stopper. #pig #pork #wholehog #wholeanimal #sucklingpig #holiday #meatporn #butcher
