Utica greens, greens morelle, 'scarole, escarole... Whatever you call it, I love this leafy green vegetable! I find it interesting that Italian immigrants were able to plant it in the U.S. and so many local recipes have since then been created from it. How do you cook your escarole greens?

In love with these little pink nuggets which were inspired by a traditional recipe from Bologna. Frying mortadella might seem absolutely ludicrous (honestly, it is), but don't dis it until you've tried it!
