6. Place onto the preheated baking dish and bake for about 20-30 minutes. About midway through cooking, turn the chicken rolls over for even browning all over.
To serve: slice the rolls to show the colourful filling and add your your fave Paleo vegies or salad.

Repeat with the remainder of the chicken thighs.

3. Chicken thighs. Ask your butcher to butterfly these and flatten by pounding with a mallet.
Preheat your oven, 160C fan-forced. Preheat your baking dish and add some ghee or coconut oil.
Lay out one of the chicken thighs and spread a thin layer of the filling along the length.
