Good morning, beautiful people! It seems like I have finally figured out how to manage my food without getting sick from insulin surges. I have not wanted to go back on medication, but it seems my body is getting even more sensitive - not only to sugar, but carbs as well. Gotta love getting older! My weakness is baked goods - which are generally a no-no for those of us with insulin resistance, so I have been on a mission to make low-carb baked goods and pancakes. Yesterday's pancakes were finally a success, and the chocolate raspberry coconut cake with lemon cream topping is almost ready! I hope everyone is having a great Friday, and remember to be AWESOME!!

Could you be persuaded to limit your sugar intake? I'm working on 0 added sugar, and minimal sugars from fruits and breads (with 0 added sugar). The truth is, I FEEL better, but it is a process. "Never Give up on Yourself." The truth is, no one else will be able to have enough hope, motivation, and positive outlook to cover your needs as well as their own.
