Microwave meals can be nutritious. Yes, really. Our #SupplieroftheMoment Easy Bean’s one-pot meals are made with just simple, wholesome ingredients, and are dairy and gluten-free to boot. Each pot of packed full of veggies and – of course – beans.
Brought up on a farm with her home economist mother, food and farming had an impact on Christina Baskerville from an early age. After studying agriculture at university, she went on to win a place on the Department for International Development’s Award Scheme, which allowed her to work on agricultural and health projects in Belize, Sudan and Bolivia.
“I worked with a lot of different crops,” said Christina, “but the beauty of beans is they are highly nutritious and they fertilize the soil as they grow – a win-win crop! I grew to love and appreciate rustic food which uses pulses widely. Some national dishes have beans as the hero ingredient – such as the Brazilian feijoada.”
When she returned to England, Christina set up a production kitchen in Somerset and created a range of microwavable one-pot meals based on recipes from around the world. Each pot has been slow-cooked and infused with herbs and spices to make mouthwatering, flavour-packed meals that are easy to prepare at work or home. Even better – each pot contains two to three portions of your five-a-day. Simply serve with rice, mixed grains, flatbreads or jacket potatoes.
