When it comes to Southern desserts I will admit I'm a snob. When someone says they have REAL
Sweet Potato Pie, Lemon Pound Cake or in this case Red Velvet Cake
, I'm always suspect of what they are serving up.
Please allow me to get on my soap box for a moment, the American culinary world has bastardised Red Velvet Cake. There I said it. Many a restaurant and chef thought by adding red food colouring to their cake that somehow made it authentic Red Velvet Cake.
In my worldview, Red Velvet Cake is SACRED
and many of the restaurants offering it are PROFANE. Please stop insulting Southern culture and Southern cuisine by saying that you have Red Velvet Cake. You'd be better off saying you have a red cake masquerading as something else. LOL
Okay, I'm off my soap box now but I'm sure everyone reading this gets the point. This photo represents what a REAL Red Velvet Cake is and should look like. Everything is in the frosting and moistness of the actual cake. The pecans are the added plus.
I have wonderful childhood memories of my grandmother and other women in my family making this cake. Interestingly, the best one I've ever had was made by my best friends uncle who was a caterer in Augusta, GA back in the 1980's. Childhood memories are everything.For Full Recipe
