A little Irish Red to celebrate St. Pat's. Made this beer around Christmas. It has come along very well.

It tastes great too. I have to admit I was a little worried because I fly sparge and I ran more water in than I wanted. I had a friend over and was not paying attention. It tasted a little watered down at the beginning of Jan. but it really came around. It took longer than normal to clear off but that worked itself out too. If you scroll down to an earlier post you will see how cloudy it was. As for the color I used a ton of Munich and some melonoidin. (think that's how its spelled)

Finally moved the shelves in my basement. This gave me 4 extra feet in the brew house. Take a look at the video. I no longer have to share my man cave with the rest of the family. Free at last!

I have the oatmeal stout done. Need to make one more batch before Lemon gets back. He wants to learn the whole process so I need to have a batch ready to keg. He gets in the 18th I think.

Here is the chiller I told you about Mark B. This is my counter-flow wort chiller. I didn't make it but, it would be easy to build. A company named Eliot Bay made it back in the 90's. It is 55' of rubber hose with copper tubing inserted and some other copper connections to hold it together. It sets on a garbage can cart so you can wheel it around. You hook up a garden hose to the top and another to the bottom and run it into a drain. (You can capture the water if you want.) The beer runs through the copper tube. It goes in at 210 F and comes out at 60 F. Works real well.

I bought this in 1995 and have made a couple hundred batches with it. I've never had a bad batch so, sanitation is not an issue. At first all I ever did was run boiling water through it. In fact I have never used sanitizer on any of my equipment, kegs, bottles or anything. I just use boiling water on everything. It drives people crazy when I tell them I don't use sanitizer but, I just never saw the need for it. I suppose if I was turning out bad beer I would use it. It's just never been a problem and I have won tons and tons of awards. I'm not trying to brag. I'm just kind of surprised that more people don't use boiling water. It's cheaper than sanitizer and works better. I've done it for 21 years without a problem. Beer has been around for a few thousand years and sanitizer has been around for what... 30... 40 years at best? These days I run a little PBW through it every 5 or 6 batches but, I could get by without it. I also like the chiller because I make 17 gallon batches and it is very fast. I just have a little March pump and I can still fill my fermenter in about 15 mins. For 5 gals you could use an immersion chiller but, I don't know how big of a batch you could run through it before the water gets hot. I've never used one. Do you add ice or cold water to keep it cold? I went from setting the pot in an ice bath to this chiller. I never had a chance to use any other method.
