Keeping with our SE Asian-Latino fusion flavors, our dessert today was Coconut Lime Cupcakes With Coconut Cream Cheese Frosting.
As some of you already know, I'm not big on baking from scratch, so I actually like
using box mixes and doctoring them.
Today, I used Betty Crocker Yellow Cake mix, subbed out the water with coconut milk, adding another 1/4 cup to make up for the extra thickness of the coconut milk. And I also added the zest of half a lime to the batter.
The frosting was a very light and mildly sweet cream cheese frosting with just a hint of coconut milk. I used this recipe,https://plus.google.com/u/0/105466596306740968847/posts/f3h29B7DhJD
and just added another 2 Tablespoons confectioner's sugar and 1/4 cup coconut milk, refrigerating the frosting for about 1 hour before frosting, and keeping the frosted cupcakes in the fridge until serving. (It was kinda warm here...)
A little more fresh lime zest on top, and that was it! A super easy way to put a yummy fusion twist on your box caked mix. :)
It was really lovely to get together with a lovely bunch of goils, and we were showered with lots of cute girly stuff, not to mention lots of good juju.
