En esta ocasión el cliente pidió un recorrido gastronómico por Italia, siendo este plato el elegido para representar al norte de Italia. La polenta (conocida como polenda o pulenda, en la Region Veneto como poenta, pulenta en la Región Marche y poulento en provenca) es un plato muy antiguo de origen Italiano preparado con harina de maíz, se come sobretodo en norte de Italia lugar donde hay nieve y mucho frio. For this event the customer has requested an “Italian gastronomic tour”. Polenta dish was chosen to represent the northern Italian cuisine. The dish is also known as polenda o pulenda, in Veneto as poenta, polenta in Marche and poulento in Provence. It is a quite antique dish with Italian origins made of maiz flour and eaten mainly in north Italy during cold days. ¿Nuevos sabores? ¿Has pensado que la parte visual y el olor de un plato son las primeras cosa que degustamos antes del sabor? Ésta fue parte de una búsqueda que he debido hacer para un cliente (Sommelier) él me pidió poner mayor atención al olor usando productos de mar. Así cree un plato fuerte donde integre chips de naranja al horno con pinceladas de Nero de Sepia y serví aun calientes para disipar el olor como si fueran inciensos.
