Tok Dal with Green Mangoes
Summers in Bengal are hot and humid. When the heat becomes unbearable, the kalboishakhis (thunderstorms) bring cool winds, rains, and a bounty of unripe mangoes. This cooling, sweet-sour dal, made with tart green mangoes, is easily the best thing you can have on hot summers afternoons.

Lobongo Lotika (লবঙ্গ লতিকা)...
...even if you don't understand Bengali, sounds like something beautiful. Imagine a small parcel of a tender-flaky pastry, filled with caramelised, reduced milk (kheer), deep fried then dipped in sugar syrup. This parcel of deliciousness is sealed with a single piece of clove on top. Clove is "Lobongo" in Bengali. Hence the name.

The Bengali New Year is coming up (15 April). We wanted to share this video so that you had enough time to make it. Please cook, and share.

"Shahi" translates roughly to 'royal'. Shahi Garam Masala is a garam masala fit for a Queen, or indeed anyone who is willing to grind a few simple spices in a grinder. This is the Garam Masala that we used in our Chicken Curry last week. But don't let its poshness stop you from using it everywhere you like! Just don't start sprinkling it on your salads or smoothies. That won't sit right with the masala Gods.
