Hot air ballooning in the Loire is a wonderful thing to do.
If you've never been up in a hot air balloon, I can wholeheartedly suggest you give it try in the Loire valley.

Cod with braised leeks, peas and lardons.
 
Cod with braised leeks and peas with lardons. Sweat some leeks gently until soft with a few lardons (use the fat that comes from the lardons), cook some peas, refresh and keep on one side. Meanwhile season your cod and bake in the oven for 12 minutes. White that's cooking add your peas to the pan crushing a few of them to give texture, reheat gently, add a little cream, season with a squeeze of lemon juice, salt and pepper. Sit your baked cod on top and pour over any cooking juices from the pan.

An annual get together with everyone in the village.  We have hosted it for the past 2 years and it's the only occasion during the year when we all see each other!
Every year we have a small get together in the hamlet where everyone brings something small to eat and we share a glass or two of wine.

A touch of frost at last in the Loire.  
A really cold snap (well below freezing) is a great thing for vines. It helps kill off those nasty fungal diseases that fester quietly in the damp warm weather and are proving to be such a problem in todays vineyards.

Broad bean and ricotta crostini.
 
Broad bean and ricotta crostini. Use a decent sourdough bread, toast and rub with garlic. Cook your broad beans and add some chopped mint, olive oil, salt and the finely grated rind of a lemon. Spread some ricotta on the toasts, top with your broad beans, drizzle with some decent olive oil and a little more sea salt. Really tasty and easy.

Introduction
An experienced English wine trade professional, I moved to the Loire valley in 2006 and set up a small French business with my partner Nigel specialising in wine education, tours and tastings for fellow wine lovers from around the world. The business operates from our home in Cumeray, a tiny hamlet just a short stroll from the river Loire close to Saumur and Angers.
