We've teamed up with Artistic Gourmet Adventures for a week of Loire valley wine discovery in 2018. Accommodation is in a luxury private chateau and there are only 6 double suites available. Broad bean and ricotta crostini.
Broad bean and ricotta crostini. Use a decent sourdough bread, toast and rub with garlic. Cook your broad beans and add some chopped mint, olive oil, salt and the finely grated rind of a lemon. Spread some ricotta on the toasts, top with your broad beans, drizzle with some decent olive oil and a little more sea salt. Really tasty and easy.

Cod with braised leeks, peas and lardons.
Cod with braised leeks and peas with lardons. Sweat some leeks gently until soft with a few lardons (use the fat that comes from the lardons), cook some peas, refresh and keep on one side. Meanwhile season your cod and bake in the oven for 12 minutes. White that's cooking add your peas to the pan crushing a few of them to give texture, reheat gently, add a little cream, season with a squeeze of lemon juice, salt and pepper. Sit your baked cod on top and pour over any cooking juices from the pan.
