My meal prep for the week done on a weekend.
A) Free-range chicken with organic black beans, corn, rosemary potatoes, unfried sweet potato fries, peas, carrots.
B) Lemon kale salad with some chicken from A
C) Meditteranean style salad with some chicken from A. Now, I can rotate through A, B, C and not get bored with the same old thing.
Another goal is to try to get every color of ROYGBIV* throughout the day. When one of those colors gets boring or out of season, I'll change out that color. For example, cherries one day, raspberries the next for the red.
To portion control, I fill plastic containers which have the measurements on the side. That's the key. That makes it so easy.…
