Today is a special day for those who will be Dining Out for Life at moto-i. For today and today only, we will release a very small amount of “White Sake” or Shiroki.

White sake sake was designated for consumption by the Gods and those of a Noble Birth. This style of sake dates back to 905.
This sake is first clarified by chilling the mash or moromi to near freezing temperature allowing the lees to settle. We then gently ladle the pure genshu off of the top of the brewing tank.

I would love to try some of that but I don't see myself anywhere near that part of the states anytime soon.
Maybe I can find some on my next trip to Japan.
